Notes: Amazing nose. Good flavor, but would like more. Might shift the mid hop editions to 15 minutes.
Using a higher balance of chloride to sulfate.
First Dry Hop addition is in primary. Dry Hop 2 & 3 are in secondary.

Notes: Steep 150-155 for 30 min, bring to boil. Add extracts and hops, adding nibs at 30 min, lactose and brown sugar at 15 min. Cool wort and pitch yeast, fermenting for two weeks. Rack on top of coconut and nibs for one week, or until desired flavor profile. Add small increments of almond extract at bottling, you want the almond to be present behind chocolate and coconut, not over powering. |

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boiling process
1lb Caramel 10
1lb Briess 2 Row
6bs Amber Liquid Extract
1lb Dry Pilsen Malt Extract
2oz Citra Hops
3oz Azacca Hops
1 Safale S-05 Ale Yeast
Procedure:
Start with 2.5 gal tap water, heat water to 165 degrees and steep grain for 30 minutes
Remove grain and bring wort to boil
Remove pot from heat, add 3lbs Amber Liquid Extract and return wort to boil
Add 1oz Citra hops and boil for 60 minutes
Remove pot from heat and add 3lbs Amber Liquid Extract and 1lb Dry Pilsen Malt Extract 15 minutes before end of boil
Return wort to boil add 1oz Citra hops and boil for 15 minutes
Add 1oz Azacca hops and boil for 1 minute
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.058
Add Safale 05 Ale Yeast
Fermentation:
Primary – 2 weeks at 64-70 degrees
Secondary – 4 weeks at 64-70 degrees
Add 1oz Azacca hops to secondary 10 days prior to bottling day
Add 1oz Azacca hops to secondary 5 days prior to bottling day
Bottle beer 5 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .3oz of corn sugar per gallon of beer.
Condition beer for 3-4 weeks at room temperature

Notes: This is a Norwegian Farmhouse Ale, but with American hops. Could almost be a NEIPA, maybe, with the late hops and oats. Calling it a NorPA - Norwegian Pale Ale. Yeast is a Kveik strain from Michael Waldren via DeWayne Schaaf from Milk the Funk (not Hot Head - but it's the closest Kveik I could find in the database). Ferment hot, ~30°C/86°F or more. |

Notes: Three temperature profiles that seem to be popular among homebrewers are just off boil range 190–212 °F (88–100 °C), the sub-isomerization range 160–170 °F (71–77 °C), and a tepid hop stand range 140–150 °F (60–66 °C). The 190–212 °F (88–100 °C) range will allow essential oils with higher flashpoints an easier time to solubulize into the wort and also will allow some alpha acid isomerization to occur with the best estimates of between 5–15% utilization. Some homebrewers will keep their kettle burner on low to keep the temperature of the wort elevated above 200 °F (93 °C) during their extended hop stands which would better emulate the conditions in commercial whirlpools. A hop stand in the 160–170 °F (71–77 °C) range will basically shut down the alpha acid isomerization reaction and the lower temperatures will reduce the vaporization of the essential oils. Homebrewers can use their wort chillers to bring the wort down to this range before adding the knockout hops or they can add a second dose of knockout hops. The 140–150 °F (60–66 °C) range will once again reduce vaporization of the low flashpoint oils, but may take longer to get the same amount of essential oils extracted. |
