Notes: This is Hapless Ginger Brew´s recipe. I´ve scaled it for a 10 liter batch to test it out.
230 G of Demerara sugar caramelised with a dash of lemon juice & 500ml of the wort, then added at 15mins. (Flame out and leave before adding - stir well and flame on for remaining boil)
All dark grains added at mash out - 77deg - 20mins
Cocoa Nibs soaked in vodka for 5-7 days |

Single infusion mash at 159 for full bodied beer. Mash out at 170.
Divide dry hop additions into 2 parts, first at 95% attenuation and second for 4 days after yeast have attenuated. Secondary fermentor only needed if not using a conical. Remove from yeast at 95% attenuation (about 1.024SG). |

Fruit Preparation
Combine guava, peeled oranges and Lilikoi juice in bowl and puree together. Fresh fruit can be added to the kettle late in the boil. Fruit could also be sterilized separately and added to the fermentation in between 3-4.5 P (1.012-1.018).
Directions
Conduct a mash at 150° F for 60-75 minutes.
Follow the boil schedule as indicated in the ingredients.
Ferment at 68° F for 5-7 days, and then dry hop

Primary 3 weeks.
Dry hop 7-10 days.
Bottle condition 2-3 weeks.
Pours a golden almost copper with a slight haze. Good head that stays to the end. Smells ridiculously hoppy with grapefruit and almost tropical tones. Taste is hop forward but with enough malt and mouthfeel to balance. Rye gives it a nice crispness. Tastes like a west coast style IPA. |

Brewed 10/25/17. starting Gravity 1.052 Original Gravity 1.059 after 40 min boil. Shooting for 1.054 gravity with 55 % brew house efficient got 1.059 with 60% efficient.
Ferment with Wyeast 1056 Calf Ale. in new ferment chamber 5.2 cubic feet chest freezer and carboy heat wrap, ink bird temperature controller.
11/07/2017 Added DryHop at 67 F.
11/14/2017 Kegged. Finished at 1.012. Fermented 7 days at 63F then 14 days at 67 F.
