Notes: Recipe is written for single infusion. If decocting, omit melanoidin malt. Double decoction, high protein mash in (126), saach (152), and mash out (170).
First deoction, thick mash, 156 rest to conversion, boil 15 mins for approximately 30 minute protein rest, adjust based on malt COA.
Second decoction. thick mash. 156 rest to conversion, 30 minute boil, start nearing the halfway of saccharification rest.
Rest at mashout 10 minutes for vorlauf.
Can do a triple decoction, mash in for acid rest, omit Lactic acid. |

Version 2 tweaks:
Using Firestone water profile with 7 g of CaCl
switching 0 min hop addition and cool quickly

Notes: Sort-of-IPA, interested in combining an "adventurous" hop with a "classical" one.
Perle actually in several additions, at flameout, and later after flamout.
In fact, initially, I was aiming for a BUGU of 1.00 (and slightly lower OG). Realized belatedly I lost more water than expected to boiloff. Chose not to add more... fingers crossed.
Wort chilled in the kettle in ice bath.
Should ferment for a few weeks @ 18-20°C.
Will probably do secondary fermentation for clarification |
