Notes: Apple cider fermented with two types of cherries and a Belgian wit yeast giving the cider a distinct apple pie flavor.
- Add 3.1 lb can of tart cherry puree to primary
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching yeast.
- Primary fermentation: 4-5 weeks @ 59°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks @ 60°- 65° (cellar temps)
- Transfer to a keg to condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg |

update 11/4/2021
skipping vic secret 2 which had a bunch of substitutions and starting with vic secret 1. mods :
* bump base malt to get to 7.5% abv
* also adjusted other malts to get to rounder numbers
* adjust hop schedule :
** magnum to warrior for simplicity.
** since increased abv will allow IBU to go up from 62 to 75...
** ...but the BU/GU ratio is about 1 just like the previous recipe.
** removing early vic secret additions and boosting the warrior to save money
** adding more vic secret late in the boil and dry hop. just seems like it needs more based on total amount of hops for the batch
* added acid malt for ph
* added water profile from RO

Update 7/11/19
brew day. Only procured one oz of vic secret so switched to Amarillo, used the vic in dry hop. Used washed and stored yeast, made starter with sugar and water. Used honey stinger honey this time.

This version is scaled down to 5 gallons and down from 73% efficiency to 60. Malt and hop additions were adjusted slightly to make for more round numbers. This calculator has the beer finishing a couple points higher than the posted recipe. Added a little more honey to put it at 6.3% abv.

Notes: One of Vitamin Sea’s mainstays is Double Summer, a hazy-juicy double IPA powered by Cascade and Citra. It began as one of their first homebrew recipes; here’s a more recent iteration that you can use as your own launch point.
“This recipe was our first recipe that we ever produced at the homebrew scale,” says Dino Funari, cofounder of Vitamin Sea Brewing in Weymouth, Massachusetts. “It’s gone through many revisions through the years, but this will give you a good starting point.”
Mill the grains and mash at 152°F (67°C) for 1 hour. Sparge and top up as necessary to obtain about 6.6 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 60 minutes, adding hops according to the schedule. Cool the wort to 170°F (77°C) for whirlpool and add the whirlpool hops. After 15 minutes, chill the wort to 66°F (19°C), aerate well, and pitch the yeast. Ferment at 66°F (19°C) for about 4 days, allowing the temperature to rise to 70°F (21°C) until the gravity stabilizes. Dry hop for 4 days, blanketing the fermentor with CO2 to minimize oxygen exposure. Then crash, package, and carbonate. |

Notes: Halve figs, roast 250F until soft, sprinkle with some brown sugar, roast 350F for 20m. Blend to a slurry with the remaining sugar and a little of the wort; add to boil for last 10 minutes.
This is basically Jamil Zainasheff's Black Scapular Dubbel recipe scaled to 1.1 gallons with the white sugar substituted with caramelized figs and brown sugar.
Hops aren't terribly important; pick a noble hop and bitter to about 20 IBU.
Ferment 7 days at 64F free-rising to 77F after the first few days.
Lower to 50F and hold 14 days; bottle. |

Notes: On brew day, the first gallon of mash runoff is run into a separate pot. Boil it down to a thick syrup, about a pint in volume, while the rest of the brew session takes place. Add the boiled down portion back to the kettle with the rest of the wort at the end of the main wort boil. Pitch the slurry from 3 qt. yeast starter and ferment the beer at 55-60F until fermentation is complete.
