Notes: Pushed boundaries of style guidelines for a competition. Due to grist and mash procedure plans, increased IBU's to offset expected increased malt flavor. All salts added to mash except 0.5 tsp chalk in sparge. Effective Water RA as CaCO3 of 118 was within Palmer guidelines.
Update: Superb Alt at the 2 month mark. Well-rounded flavor/mouthfeel and great clarity. Head retention for days. Pic was taken at least 10 minutes after pouring w/ no swirling. Might consider increasing the 15 minute Spalt addition by half. |

This is the best stout I have ever made. Quite possibly the best beer I've ever made. I based the recipe on 70% efficiency and came out high but it was perfect. I will making this again in a week or two. Due to the high ABV, maybe it should be an Imperial Milk Stout. |

Notes: Steep grains in 2 gallons of water for 45 minutes at 155 degrees.
Remove grain bag and let all liquid run out, then pour hot water over the bag until all sugars are in the pot.
Add spring water up to 4.5 gallons and bring to a full boil.
Add all your extract and stir it in.
Then add your hops and boil for 60 minutes.
Take off heat, add water up to 5 gallons and cool to 65 degrees.
Transfer the wort to a fermentor add yeast, and top it with an airlock.
Beer is ready to bottle once fermentation ends. |
