Notes: The first two weeks of bottle conditioning has a really tropical fruit taste, after the third weeks, it become more floral with a note of tropical fruit. Really great IBU of 60 is not that perceptible. Will rebrew this recipe for sure. Primed at 2.4 CO2 per volume. After 2.5 weeks of warm conditioning all bottles were moved into the refrigerator for cold conditioning. |

Notes: Two stages of hopstand/whirlpool - first at flameout for some bitterness/isomerization (half an hour), followed by a lower temp (85C) hopstand for an additional half hour (this is in the sub-isomerization range), and is attempting to strike a balance between more rapid extraction of hop oils and the volatilization rate.
Mash done in 18L of water (strike temp 74C to hit 67C mash temp), BIAB, with 14L of sparge water (single sparge).
Hops will be bagged to try to keep some hops out of fermenter. |
