I'm using my usual saison grain bill, though with domestic pilsner for the first time. I'm using beet table sugar for the 10% sugar component, rather than wasting honey. I might use honey to carbonate the keg or bottles. Note: IBU was supposed to be 29, but somehow the preboil value was entered wrong! It's actually 21 ibu instead. The lower bitterness might play well with the honey malt. 30Sep2025 Brew Day: - Mash pH est. = 5.45. pH measured = 5.22. I suspect probe drift of up to 0.15. Guessing ~5.35 actual. No pH adjustments. Replace probe asap. - OG = 5.75 gal @ 11.5 brix (1.046). 80% efficiency. 25Oct2025 Kegging: - Did not take FG, but know it is ~1.001. Smelled good! EKG hops seem to play well with saison. Did not prime with honey. 20Nov2025 Tasting - Good, but leans too heavy on malt for my taste. Will rebrew, replacing honey malt addition with victory malt. ------------ 20Nov2025 Rebrew as M&D VICTORY SAISON - pH should be similar. Increasing mash lactic acid from 1.8ml to 2.0ml - Changing hops to Comet and Stirling.

Adjusting mash hops. originally had 4oz whole hops for the mash but forgot to order them, used 2oz pellet instead (on rebrew, go back to whole hops!) I did also forget to put them in the initial mash but they went into the 2nd batch sparge runnings which sat for 20 minutes. (Side note I think the purpose of whole hops in the mash is just so that it is more easily strainable. The way I do mash with false bottom and strainer bag, the hop pellets inthe mash was not an issue.) Adjusting efficiency. Ended up with better efficiency than expected, boiled down to less than 5 gallons as was up around 1072 OG before diluting down to 1055 for 5.5 gallons. Adjusting volumes. Not sure where they came but they were kinda all over the place. ============================== 5/25/2025 About to rebrew for a summertime poolside beer destined for cans. I don't think I'm really gonna change anything this time... ============================== 9/30/2024 brewed last week. never picked up the pils malt so it was back to 2 row. poor efficiency somehow. refractometer read 1050 but the new tilt said 1047. discovered refractometer needs calibrating. ============================== 4/14/2023 modding this this year to use pilsner malt. otherwise everything else can stay the same. ============================== 5/2/2023 (this was previously huell melon pale) this time doing the same except going with cascade. need to update recipe but would like to do mash hops. ============================== 5/2/2023 i dont have any notes and cant remember how this beer turned out last time. Huella Melon. Good sentiments. anyway will brew this pretty much the same except changing the efficiency and specifying lutra. reused lutra from a rice lager. ============================== 3/14/2022 repurposing for huell melon pale ale. with updated water profile results from ward, my water profile for this beer now looks a bit out of wack by the numbers but it worked well for the last beer so im just going to roll with it for now until i have time to figure out how to fix it. ============================== 2/8/2022 This lutra is taking forever. Tonight its 10 brix which is like 1026 and 4.6%. Tastes sweet. Still bubbling smh ============================== 2/3/2022 measured 1060 OG i think i got more than 5.5 gallons. i accidentally grained into my entire volume of hot liquor. after mash i sparged a little with about 1.5 or 2 gallons of cold water. pre boil vol was like 8.5 gallons ============================== 2/1/2022 revamping summer madness for this beer which will feature mighty axe julius hops instead of cascade. going with lutra again. ============================== 9/13/2021 last week measured 1013 FG for 4.8%abv. but it does not taste that light. nice body and carapils flavor, also the dry hop was faint but nice. could maybe use more dry hop but in the interest of keeping it light and cheap and not-session-ipa, i think its perfect just like this. ============================== 9/1/2021 - brew day Not too confident on 70% eff dropping to 60, bumping 2row from 975 to 1150. Should do better with water but i think I'm gonna use tap and leave out acid ============================== 7/22/2021 Just had Port City Essential Pale Ale recently which has to be the tastiest pale ale on the planet...at very least it is one of my absolute favorite beers. this time it strikes me that it has a lot of not bitter hop flavor and decent backbone while still being 5.5%. Their website says 35ibu so im knocking down the warrior contribution from 0.75 to 0.4oz.
