Notes: Soaked cocoa nibs, sweet orange peel and coriander in vodka for a couple days and added to secondary just before 4 day cold crash. Recommend NOT using orange peel but actual zest. The infusion was bitter with no notes of chocolate or coriander (1 oz).
whole leaf hop additions were dunked numerous times and removed when the next addition was added. Then wort squeezed from them. |

Notes: Add flaked grains during last 15 minutes of Mash to avoid a stuck mash.
Use Glucabuster during mash if rice hulls are not allowing good mash flow.
Pitch at 75 F or below.
Fermentation should take 7 days total.
Add Ascorbic acid and ALDC enzyme and 2ml Lactic acid with dry hops to minimize hop creep and production of diacetyl. Dry hops will increase pH so acid will counteract this. Final pH should be 4.3 - 4.5.
Add dry hops during high krausen to minimize O2 ingress.
v2 5/19/26 - added flaked wheat. Lowered Golden promise and replaced with more pilsner malt to lighten color. Dry hops increased to 7 days. |
