Notes: -Water Chemistry figures were suggested by a profile BF offers for a light and hoppy beer, and produced by inputting the mineral figures on the bottle plus 1 TBS epsom salt and 2 TBS Gypsum.
- Mistake. I forgot to put in half of the pale malt and had a temp of 69-70 and watery mash for 15-20 minutes as I waited for it to cool. I then saw mistake, added rest of malt and had mash temperature of 64. Mashed for 60 min from there. GOOD NEWS. At end of mash, temp was 64-65c, so seems okay.
- 60 percent bright tablet
- Mistake. Sparge water was only 65c, so without thinking I dumped 1.5 litres hot TAP water into sparge, so no longer 1--% spring water.
- Preboil gravity 1045. Start vol is 37 ltrs. Need to boil of 4 litres to have 33 litres and target OG of 1050.
- Hopstand- didn't bother cooling, just wanted a few minutes, chucked hops in, stirred and left for 30 minutes with no further stiring.
- OG 1050, 67% efficiency.
- Poured wert through large mashing bag and into fermentor to catch trub and this worked well.
- bottled on day 6. 145 gr sugar for 25.5 litres at 16c to produce 2.4 co2
- fg 1011. 5.1 abv. Hoppy . bitter and the residual sweetness I have been looking for. very promising at tasting. Good clarity as well. Liberty bell rocks. |

Pulled out hop mesh at 45 min in, added hibiscus at flame out

Major sulphur, unusual for this yeast. I think this yeast is ‘tired’
4/11, fg 1.012 and still sulphur like and not very red. Tasting surprisingly good.
Will leave for now, may rack and/or add mor hibiscus later
4/15, sulphur mostly gone added 3cup/3oz of hibiscus tea to keg and racked to keg.
4/22, nicely tasting of tart and classic Belgian flavor. Love it. Now waiting to carb fully |

| Notes: A thirst quenching and light hybrid between lager and saison styles. This beer turned out great. I dry hopped with Citra, but found the Citra flavour dominated while the beer was young. After it had aged a bit the distinctive saison flavour came through. It has an almost champagne-like nose and benefits from a high level of carbonation and chilling well before serving. |

Use a blend of pale malts? ESB, MO, Golden P, 2-row? - maybe toast some malt - 8%?
Fermentation will occur quickly, but must do a diacytle rest by raising the temp slightly to 68/69F for a few days to urge the yeast to clean up. Once signs of flocculation show step temp up, or when krausen starts to fall.
be careful to monitor boil gravity. If it is too low add some DME to boost OG 3 - 4 oz

also, consider using a different yeast wlp002 i find slightly weird, sort of smoky tasting.
and do a 50/50 split of maris otter/golden promise and ESB malt.
could be slightly more bitter, but only slightly. like 15 IBU?
also, find different way to darken, perhaps use a darker sugar and more, also only a touch of black malt, and maybe some amber malt?
- maybe use some amber malt, and replace the crystal 75 with either fawcett dark crystal (british malt) or drop to crystal 60. Balance these malts though. |
