Notes: Hi, all!
I brewed this recipe on January 28th and it has been steadily fermenting since then. I gave a quick sniff of the airlock and got a Sulphur-like aroma. This is not surprising since it is still fermenting, and also considering that it was derived from a Belgian. I did a little bit of digging online and found some forum discussions on this subject. User jnick from "homebrew talk" contacted the owner of Omega about this and received this "Sundew can definitely kick off a ton of sulfur during fermentation (its parent strain, Belgian A, does the same thing). Give it a little more time and that should condition out. Everything else sounds on point. Let me know if you have any other questions".
I normally leave my homebrews to ferment for about 2.5 - 3 weeks before cold crashing or transferring to secondary. So, in the meantime I will wait for this to finish fermenting. Expect an update by the end of next week.
Best Regards!
- Dennis (02/06/23)
-------------------------------------------------------------------------------------------
Update!
Fermentation has almost finished, and the sulphury smell is no longer apparent. I will be waiting a couple more days before racking into a secondary along with a fining agent. I plan on bottling this in about a week.
Best Regards!
- Dennis (2/15/23)
--------------------------------------------------------------------------------------------
Update!
Bottled about 2 weeks ago, I'm going to let the bottles condition for another week before transferring to the refrigerator. I opened a bottle to check the carbonation and give it a quick taste. The strawberry characteristic is very subtle, really all of the flavors are subtle. I didn't take an OG or FG recording, so I don't know exactly where issues would have arisen. I have since procured some instruments that will help with recording these variables, so all future recipes posted to brewer's friend will have better data. I'll provide a final update after conditioning is finished.
Best Regards,
- Dennis Gifford (3/9/2023)
-----------------------------------------------------------------------------------------------
Final Update!
Bottle conditioning has finished, and I pulled one out of the refrigerator last night to try. The first and most obvious thing I noticed was the very apparent Belgian-like character which is most likely due to the yeast strain being derived from a Belgian strain. Overall, the beer turned out okay, definitely not a cream ale (more like a strawberry Belgian ale). If I were to brew this again I would adjust the grain bill a little bit, use more strawberry puree, and a yeast like California ale from white labs. I definitely want to use Sundew for a different recipe in the future.
Best Regards,
-Dennis Gifford |

Notes:
The Milk The Funk Gose is an 8 gallon (8 gallons in the fermenter) recipe for a lemony, tart, and lightly salty beer that will quench any thirst on a summer's day. This recipe is an 8 gallon, no boil recipe, and is made for a system with 73% efficiency. Please adjust the recipe to fit your system.
No hops if possible. If hops have to be used for legal reasons (for commercial breweries, for example):
Golding (UK) 2 oz Mash 8 AAU
Steps:
1) 1-2 days before brewing make a 1 liter starter of 1.040 wort, and add your vial of WLP644. Let it sit at room temperature until use. Also make 1 liter of 1.040 wort, and pour OYL-605 into the starter. Incubate 24-48 hours at room temperature to increase the cell count.
2) Mash in at 145°f for 60 minutes; if hops have to be used, make sure to add the hops to the mash.
3) Sparge as normal.
4) Bring the wort to a boil, add salt and coriander, and then turn the heat off.
5)Adjust PH ~4.2 to limit growth Clostridium butyricum and other potential off-flavor bacteria. Not necessary, but this is a best practice suggestion. See How to Pre-Acidify for instructions. http://www.milkthefunk.com/wiki/SourWorting#Howto_Pre-Acidify
6) Chill the wort down to 95°f, and transfer to a CO2 purged carboy or keg. Add the 1 liter of OYL-605 Lactobacillus Blend starter. Allow it to sour for 24 hours. No external heating is required.
7)After the souring phase, pitch WLP644 Trois. You can aerate if you feel necessary. After 2 weeks a stable gravity should be reached.
8)Rack or transfer off as normal to bottles or a keg.

Notes: I brewed it when I saw the recipe on byo, it's ok.
I don't find it particularly special but a good ale to have for those days you are working in the yard and don't want to drink your prized beer. I usually add a lime for a little zest.

Notes: Step by Step
Mill the grains (including the flaked grains, but excluding the rice hulls). Mix the rice hulls into the grain post milling and dough-in targeting a mash of around 1.5 quarts of water to one pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 122 °F (50 °C). Hold the mash at 122 °F (50 °C) for 15 minutes then raise the temperature over the next 15 minutes to 154 °F (68 °C). Hold until conversion is complete, about 60 to 90 minutes. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.039 (9.7 °P).
The total wort boil time is 90 minutes, which helps reduce the SMM present in the lightly-kilned Pilsner malt and results in less DMS in the beer. Add the bittering hops with 60 minutes remaining and the spices with five minutes left in the boil. Do not bother with Irish moss or other kettle finings. Chill the wort rapidly to 68 °F (20 °C), let the break material settle, rack to the fermenter and aerate thoroughly.
Pitch ten grams of properly rehydrated dry yeast or use two liquid yeast packages. Alternatively make a 2 qt. (2 L) starter using one package of liquid yeast. Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation. When finished, carbonate the beer to approximately 2.5 to 3 volumes of CO2. |
