3-stage step mash. Boil for 70 minutes.
Ferment at 75 for 14 days.
First made 4/20/25.
Followed step mash process, starting at 120. This made some sense given the 6 row being used. Added 1 tsp of gypsum to the strike water to bring out the hop bitterness.
Added 1 gallon of 170 sparge water and brought to boil. Gravity was only 1040 before I added sugar. It was 1044 after the sugar. pH after mash was 5.3, so no need for any acid.
Boiled for an hour with 0.2 oz magnum. Added 2.25 oz of new Amarillo with 5 mins to go. Let that boil for 5 mins then put in Jaded chiller. Brought back up to the boil then chilled to 160 (very quickly as water is 50). Then added whirlpool hops into the wort, but didn't run a whirlpool as it was 10 pm. Let the hops sit at 160 - 175 for 20 mins, then chilled to 75 and put into fermenter.
Micro Homebrew didn't have Lallemand Saison yeast, so subbed Wyeast 3724, Belgian Saison yeast. Made a starter with this for 12 hours, and added it to fermenter. Put on the therm wrap as wanted to keep temp at 75. Also did not fully seal the fermenter, as didn't want any pressure on yeast.
Vigorous fermentation after 24 hours, and gravity fell quickly 10 1037. Then went down more slowly, so increased temp to 77 and shook fermenter to agitate yeast several times. Left in fermenter for 13 days to make sure fully fermented. gravity fell slowly to 1009, and then a few more points over the last 4 days to 1006, which is slightly above target of 1004. Taste had some funk and and hops came through nicely, so with a lot of carbonation should drink well.
Started drinking after a week of conditioning in kegerator. It's a tasty beer, with gentle spice and characteristic Belgian yeast flavors. Hops work well to give it citrus notes. Easily drunk, and high carbonation helps. 8/10. |

Water: if using muni water use campden tablet to remove chlorine.do not need to optimize sodium, chlorine, sulfates, etc, but need 50-150 calcium for taste and acid to lower pH. suggest <5ppm sodium, <50 ppm bicarbonates, sulfates and chlorides <100ppm.
sweetener: 100% cane or beet sugar. 11 oz sugar per gallon.
Because you do not have the enzymes in the malt to lower the pH to the low 5’s, you may need to add a small amount of phosphoric or lactic acid. A pH in the low 5’s is essential for brewer’s yeast health. The optimal pH for wine yeast is around 3.8. There is no buffering capacity without the malts, so add very little amounts at a time.
yeast but use a strain that ferments quickly, is highly attenuative, and is very neutral. You can use brewer’s yeast, wine yeast, or distiller’s yeast. recommend pitching around 20% more yeast for hard seltzer than for ale.
Need yeast nutrient. In addition to this, we also recommend adding diammonium phosphate (DAP). No more than 3/4 grams per gallon of hard seltzer, or the yeast may experience overstimulation. Check yeast nutrient if they use DAP adjust accordingly. When adding the nutrients, multiple doses – once with the yeast pitch, one the following day, and another one 2 days later. If it slows down well before you approach 1.000, add another dose. If it is actively fermenting after the first two doses, feel free to hold off on the third dose until it slows down.

Notes: This hazy double IPA was formulated to showcase the tropical and juicy aromas from BSG Hops’ Zamba™ blend and the minty and green-apple aroma notes from German Polaris hops. The grist is typical for the style, with a little boost from sucrose to increase wort gravity without adding non-fermentables or additional malt flavor. The hopping schedule and yeast strain are intended to set the stage for aroma retention and biotransformation while keeping hop bitterness in check.
Recipe creator Ashton Lewis says, “The name is also a bit odd and was inspired by the recent Great Conjunction and the use of North Star Pils ™ malt and Polaris (a.k.a. the North Star) hops.”

Directions:
This recipe uses reverse osmosis (RO) water. Add 2 tsp. calcium chloride, ½ tsp. calcium sulfate (gypsum), and ¼ tsp. sodium chloride (non-iodized) to the mash water before mashing-in. Note that acidulated malt is included in the grist bill; mash pH following mashing-in should be about 5.4.
Mash the malts at 154°F (68°C) for 60 minutes. Start recirculating wort. Sparge slowly and collect 6.5 gallons (24.5 L) of wort. Heat to boiling and boil the wort 70 minutes, adding hops at the times indicated in the recipe. Adjust original gravity post-boil with RO water as required.
Chill the wort to 158°F (70°C), add third kettle hop addition, let steep for 10 minutes, and continue cooling wort to approximately 68˚F (20˚C). Pitch yeast, and ferment between 60 ˚F and 68˚F (15.5–20˚C) until complete.
Dry hops should be added on day 2 and day 4 of fermentation. If using hop bags for dry hopping, remove bags on day 7; if not, rack to secondary fermenter or keg equipped with spunding valve. Complete fermentation and any hop creep following dry hopping should be finished by about day 21.
Prime and bottle condition, or serve from keg if naturally conditioned during aging.
PARTIAL-MASH VERSION
4.4 lb. (2 kg) Briess Light Pilsen Dried Malt Extract
3.25 lb. (1.47 kg) Rahr Red Wheat Malt
1.5 lb. (680 g) flaked oats
1.25 lb. (567 g) sucrose @ 60 min
Perform a mini-mash with the wheat malt and flaked oats at 154°F (68°C) for 45 minutes. The steep method is suggested using a grain bag and 1.5 gallons (5.7 liters) steep water. Remove the grain bag from the steep after 45 minutes, gently pour hot water over the steep bag to improve yield, add dried malt extract, and adjust kettle volume to 6.5 gallons (25 liters). Bring to a boil and follow the remaining recipe as above. |
