Notes: No Fermaid O in this batch, as we will be using Go-Ferm to rehydrate. 1g yeast / gallon, as at or under 1.1 SG, Rounded up to the next packet. 1.25g/gal (5g) Go-Ferm in 35g boiling water. Cool This off with 70g cool water and activate yeast. No starters necessary. Yay dry yeast!
Mix Pectin Enzyme into very hot water to dissolve before pitching. Aerated by shaking for 1 minute before pitching yeast.
Did 4 gallon containers per one ice wand, and fermentations where in the high 60s after fermenting overnight. All fermentations still got fully going, even with ice on them.

| Notes: clean and drinkable but according to judges, is a little thin compared to style. Recommend adding an additional pound of DME and maybe a little carafoam to add body and mouthfeel. Many stout junkies at local home brew shop very much enjoyed this one, didn't recommend any changes unless I was to enter it in competition. |

| Notes: Orange Blossom Honey (non-pasteurized) in (8) 11 oz. jars from Wal-Mart is introduced the very end of the 60 minute boil at flame out. Just long enough to pasteurize. I Do a 9 gallon wort boil in a 10 gallon kettle. It is distributed evenly in to (3) 5 gallon fermentors with 2 gallons of cold water already in each to help cool the wort to yeast pitching temperature (I use 1 package of Liquid Wyeast Ringwood Ale in each 5 gallon fermentor). Produces a potent Light Ale with sweetness at the end balancing the Hallertau Mittlefruh spicy-ness. My personal favorite. |

Notes: SG 8 May am 1.051 Temp peaked overnight to 24c brought down 8 hours later to 18c.
11 May 1.028 Chocolate flavour, no acid notes. Temp allowed to rise to 20 and carboy turned sharply to rouse yeast as some signs of slowing.
15 may 1.022 kept at 17c-ish, slight acid note develop from yeast. Yeast forming cake. Very low fermentation rate. Will warm very slightly and agitate.
15 may, Suspecting that dark malt+S04 yeast won't naturally go much over 57% attenuation on it's own, Calculate current, and near final ABV 3.8, therefore add 400g sucrose to bring projected final ABV close to target.
On adding sucrose, yeast went back to work almost immediately. It remains to be seen if the sucrose gives the yeast added activity to reach some of the more inaccessible sugars in the malt.
17 may AM SG back to 1.0218. Taste: fairly rounded. Fermentation slowing, yeast caking. Been at about 19c.
20 May PM SG 1.018 Temp increased due to weather to 22c, although fermentation more-or-less stopped. Classic porter flavour, yeast will be allowed to cake and ready for kegging.
21 May Kegged and gassed. Tastes awesome. Holds a smooth, ceamy head for 30 mins and presents like an Irish coffee. Enjoying at room temperature. |
