Notes: Use 4.5 gallons carbon filtered water, adjusted with 4 grams gypsum. Step Mash: 45 Minutes at 150F, ramp to 170F over 15 minutes (2.5 gallons boiling water), rest for 10 minutes at 170F. Collect 6.6 gallon, sparging with 175F water. Boil vigorously for 75 minute, hopping accordingly. Whirlpool and allow to settle for 15 minutes. Chill wort to 64F. Aerate wort and pitch yeast. Ferment warm 68-70F. Dry hop one week into fermentation. Allow beer to stay warm with hops for a week. Rack beer, crash cool, and cold age for a week. |

Notes: Added 1 min of O2 (pure) before pitching
Added an additional 30 seconds of O2 to fermentor after 18 hours to help yeast. Ferment temp start at 64 will raise temp 1 degree a day/
After 6 days gravity at 1.020. Taking a little longer than normal. Increased fermentation temp to 68.
Beer tastes great. Very similar to LaChouffe in taste. I would use beet sugar instead of cane sugar next time and mash at 148 instead of 154 to give it a lighter body. |

Notes: Pilsner with NZ hops.
90 minute hops are FWH.
After boil cool wort to 85c and then add whirlpool hops and whirlpool for 30 minutes.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |

Recette improvisée sur le fly
200g de houblon réutilisé (probablement oxydé) du dry hop de kombucha Mangue Orange Houblonné + jus d'orange + citron séché, etc qui vient avec.
Tout ça ajouté au mash.
Mash prolongé de 20 minutes à cause de visite.
Bon - crissement trop de moût... 24-25L probablement en plus des 2 litres de jus d'orange et purée de mangue (fuck)
OG: 1.048 - Gravité et volume fermenteur ajustée en considérant l'ajout du jus d'orange boîte (2L)
Amertume très présente - probablement autour de 50 IBU.
