Notes: This is my second time doing this recipe, a slightly revised version at least.
I plan on adding 1lb. honey with 3/4 oz of steeped sage to one 5 gallon fermentor at racking, and dry hopping the other fermentor with 1 oz of galaxy after active fermentation in about 6 days for about 6 days.

the one with the no chill is a bit hoppyer and the chilled one you can taste more corn flavor

Notes: Regarding how long to smack pack swell before use: "I believe its not a problem. They are sterile and guaranteed by Wyeast. In fact one day is suggested for each month past the MFG day for full activation. This advice came directly from Wyeast via an email. "
Lots of changes to grain bill because last minute realized I didn't have the ingredients. Roasted barley vanished. Using chocolate along with increased carafe 3 to try to emulate roast coffee flavours with some sweetness. Was short on rice as well. substituted sugar. |
