Strawberry Blonde: 150g chopped strawberries into fermentor
Cilantro-Lime Blonde: 20g fresh cilantro plus zest of 1 lime @ 5 mins.
Brew 1, October 2021. This made a really good beer; however, the FG is a bit high to style. I had to add some DME to bring gravity up using the 1 gallon procedure, use sugar next time. I added a packet of EC-1118 to this batch to see if it thins out. Tasting:
- What I liked: Nice head retention, good clarity. Nice malt aroma, slight earthy hops. Good dry, cracker and biscuit malt character, a bit of earthy hop flavor. Light pear esters. Pineapple aftertaste. Carbonation is good. Touch of tartness, Slight bitter finish. Very little fermentation character.
-What I didn't like: A touch too dark and a touch too rich. Could use drying out a bit.
- What to change: Add sugar to dry out the beer. Reduce color malts. Perhaps use a more "Belgiany" yeast. Perhaps the BE-### dried yeast. Scale up to 3 gal. |

“This recipe may seem overly simple, but that is for a reason. The true purpose of the intentionally basic grain bill and hop schedule is to highlight a truly unique yeast strain. Omega Yeast has released a single strain of Norwegian Kveik, and the results from this strain are truly impressive. Originally isolated from Omega’s Hornindal Kveik yeast blend, Lutra™ is a rapidly fermenting yeast strain with an incredible neutral flavor expression within a wildly remarkable temperature range. Fermented at traditional ale temperatures around 68F, Lutra™ produces nearly lager-like beers with an exceptionally clean and crisp finish with minimal ester production. On the other end of the temperature spectrum in the low 90F range, Lutra™ remains quite clean yet expresses a gentle ester profile that brings to mind the flavors of a traditional Kolsch strain. In addition to its incredibly clean and crisp flavor profile, Lutra™ is an absolute beast with an insatiable hunger for malt sugars - full attenuation can be achieved in mere days. With lower temps, I have found that this recipe can attenuate in 4 days, while elevated fermentation temperatures pare this down to 3. Go ahead, crank this one up and let it rip - you will be surprised at how quickly and cleanly Lutra™ gets the job done, and then it seems to magically drop out of suspension leaving a relatively clear beer in short order. It may be a “new” Kveik strain to most, but Lutra™ is certainly a legend in the making.”

Notes: This was originally a much more conservative recipe to make an amber ale. Two mistakes happened:
1) I did not use enough water when steeping.
2) I used twice as many hops as I was supposed to.
To save this recipe, I added more DME. I also adjusted the amount of grain in this recipe to reflect the OG.
In the end it turned out as a delicious balanced Scottish Ale. |
