Notes: Based off of a recipe I found + using the hops that I got from my late Grandmother's Garden. She's known for saying "I Love You More" (ILYM) a lot, so this one is for her. I think they're Cascade hops, but not 100% sure.

Recipe Specs
Batch Size: 5.0 gallons
Original Gravity: 1.050 (75% Efficiency)
Final Gravity: 1.011
SRM: 4.7L

ABV: 5.1%
Ingredients:
5.4 lbs Pale Dry Malt Extract
1 ounce of Cascade Hops (6%AA) for 60 minutes (6AAU)
0.5 ounces of Cascade Hops (6%AA) for 30 minutes (3AAU)
0.5 ounces of Cascade Hops for 15 minutes
0.5 ounces of Cascade Hops for 1 minute (flameout)
0.5 ounces of Cascade Hops dry-hopped for 7-14 days
1 tsp Irish Moss or other fining agent
US-05 SafAle yeast by Fermentis, Wyeast 1056, or White Labs WLP001
Procedure:
Heat water to 170° and stir in malt extract until completely dissolved. Bring to a boil.
Add first hop addition and start timer. After 30 minutes, add second addition. After 15 more minutes, add third hop addition and the Irish moss. As you turn off your heat, stir in your final hop addition. Whirlpool, chill to 68° F, and rack to your fermenter.
Pitch yeast and ferment at 68° for 7-10 days or until fermentation is complete. Rack to secondary fermenter with .5 ounces of dry-hops. Let rest for 7-14 days at 68° F and bottle or keg to 2.5 volumes of carbon dioxide. |

Notes: Start Mash at 0800. 4kg Gladfield Ale and 250gm Gladfield Redback at 67C in 12L water ( with 1tsp Magnesium Sulphate and 1tsp Calcium Sulphate added to HLT 20L total ).
Start Sparge at 0930-1030 Collect 27 Litres - ( sparge with 19 litres + 12 in mash = 31 litres so still 4 litres in grain?? ). Flow a little sticky - suspect tap!!
Fire up gas at 1020 with 20 litres add another 6 litres from second pot. Boil achieved at 1055 and wort chiller in to sterilise. Add 40 gms chinook in spider at boil. Boil with lid off!!!
Flame out at 12.30. 24Litres after boil.
Start chilling ( 2 ice packs in box with coil tubing ) 1235. 30C at 1315. 25C at 1330.
Start runoff into MJ Fermeter at 1335 - finish at 1445. Collect 20Litres at 1050OG.
Hydrate 2 sachets US05 at 1520 for 20 mins. Pitch into fermenter at 1540 and aerate/ stir vigorously. Into fridge 1540. at 18C. Started bubbling when checked 0700 next morning.
Go well Brew10.
Sunday 5/5 add 30gms Mosaic and 30gms Citra as dry hop.
Wednesday 8/5 chill fridge to 4C. Tasting good.
Bottle Friday 10/5 1500 24 x 750ml and 2 x 500ml = 19Litres. Forgot to take final gravity. |

1/2 habanero pepper
Roast the peppers over an open flame until all of the outer surface is charred black. Set them aside, covered and allow them to steam until cool enough to handle. Remove the charred surface, cut off the stem and remove the placenta and seeds, then cut them into strips lengthwise and heat them in an oven for 10 minutes at 200 °F (93 °C). Once cool, add the peppers to the secondary for 7 days. Use hop basket to facilitate removal.
