Courtesy of Ozark Beer cofounders Andy Coates and Lacie Bray, here is a homebrew-scale recipe for their BDCS—a bourbon barrel–aged double cream stout meant for months of wood-aging to balance and soften its profile.
Mill grains and mash at 154°F (68°C) for 60 minutes.
Vorlauf until the runnings are clear of particles, then switch on the burner and run off into the kettle. Sparge at 170°F (77°C), topping up as necessary to get about 7 gallons (26.5 liters) of wort—or more, depending on your evaporation rate.
(If dividing the grist to conduct two mashes, begin boiling the first batch while mashing the second.) Boil for about 2 hours—or longer if necessary to get near the target starting gravity—adding hops and lactose according to the schedule.
After the boil, chill to 66°F (19°C), aerate well, and add plenty of healthy yeast. Ferment at 68°F (20°C) until fermentation is complete and gravity has stabilized.
Rack the beer into a bourbon barrel—or a sanitized fermentor with about 3 oz (85 g) of bourbon-soaked oak cubes—and age patiently. |

Notes: Juster batch size til 35 liter OG bliver derved 1,126.
Strike water = 44,5 liter. Opvarm vand til 72,6 °C og tilsæt malt.
Mæsk ved 66 °C 1 time. Mash-out ved 77 °C 15 min. Sparge med 16,4 liter vand, 77 °C.
(Vær obs på at disse vol er ved 20 °C)
Tap 7 liter urt i gæringstank, 10 liter i fustage #1 og 18 liter i fustage #2.
Fermentering:
Lav gærstarter på 4 liter. Dekantér.
1:
De 7 liter urt i gæringstanken tilsættes 5 liter vand og gærstarteren. (OG = 1.074). Urten luftes 15 minutter.
2:
Ved stormgæring (SG ca 1.040) tilsættes 10 liter urt fra fustage #1. Urten luftes 15 minutter.
3:
Ved stormgæring (SG ca 1.040) tilsættes 18 liter urt fra fustage #2. Urten luftes 15 minutter.
4: Gæres i bund til FG ca 1.020

Notes: This recipe was derived utilizing readily available / common grain bill and off the shelf yeast for the style. The hops utilized are not so typical for the style but I had them in STOCK after purchasing them by the pound at massive discount rates...hence the name and how the hop selection came about.
The water chemistry may be most overlooked piece of this beer and controversial element of this style. The water chemistry for this recipe was developed after recommendations from an award winning professional brewer who stated that their focus was on maintaining a 3:1 Chloride to Sulfate ratio. |

| Notes: Brewed 1/24/15. Strike water was about 170 and it cooled to about 153F. I recirculated about 2 gallons and it dropped down to 150F. PH was 5.4 which is right about where it was predicted. In kettle efficiency was 80% which is a bit lower than I expected but probably will be fine. Decided to do a hop stand (0min addition and cooled it quickly) at 180F but it dropped to 170F over the 15min. My efficiency was a bit less than I expected which might have been due to a quicker sparge. I also used more sparge water so possibly that diluted it more. Not sure why it happened this time. Pitching temp leveled out at 68F. 1/25 morning time it was fermenting at sitting at about 64F. Evening time it had risen to 67F so I cooled it a bit. 1/26/15 morning time it had drifted up to 67F so I cooled it a bit. 1/27 was 64F in the morning and it had drifted to about 67F by evening. 1/28 in the evening I took it out of the bath and it was sitting at 68F when I removed it. 2/7 dry hopped and took a gravity reading. 2/12 biofined with 2Tbls. Kegged 2/15 which means I dry hopped for 8 days vs 7. 2/28 I decided to further dry hop the brew in the keg. Also wanted to kick the carbonation up a bit more. |
