Notes: Adjusted Northern Brewer batch size from 5gal to 4 gal to put recipe into style guidelines.
NOTE: Total boil time for this recipe is 15 minutes and includes whirlpooling hops before chilling.
BOIL:
Add lactose 10 mins remaining in boil.
SECONDARY FERMENTATION:
Slice vanilla beans length-wise and scrape out seeds.
Toast coconut on a cookie sheet at 300F until golden brown, stirring often.
Add both ingredients to fermenter for secondary fermentation for 1-2 weeks. |

| Notes: Wild Wedding Yeast in starter (yes, the yeast is wild and so was the wedding where the yeast was blended during the ceremony). Expect low flocculation and attenuation if left in primary for 7 days. Depending on gravity readings may leave in primary longer. Would actually not mind too much if beer was left a bit cloudy from the yeast and show some characteristics of the yeast. |
