Speedy Home brewing from Feb 28 2014.
Still learning to brew I have been using these version to play with different Hops and slight changes to learn techniques and taste the differences with little variations by keeping it simple.
This is a 1 gallon recipe, I am using a 10 quart stockpot, and a 1 gallon carboy.
Warm up the water to about 150 degrees then add the 1 pound DME - Light. Once boil starts this is the 15 minute mark and add 12 grams of Hops,
At 10 minutes add Fermax and Whirlfloc
At Flame-out add 17 Grams of Hops
Chill in Ice bath
Strain and put in Carboy, I go back and fourth a couple of times to bring air back into wort
Add / Sprinkle 2 grams of SF-05 Wait 30 minutes. Cover with Tinfoil
Aerate / Shake the bottle for 3-5 minutes
Once Fermentation finish's about 5 days add 1 ounce of hops |

| Notes: This is a nice dark beer for those days when the weather is really starting to get cold. You're going to need something that sticks, something with body. With biscuit and roasted malts, this is a full-bodied brew, and the smoked and chocolate malts will add depth and heartiness as well. Throw in some flavors of coconut (unsweetened, toasted at 325 for ~20 minutes), chocolate, and vanilla, and you've got the feel of a cold hot chocolate too. The spicy, leathery bitterness from Perle hops remind us that baseball season is not too long gone, while the milder floral characteristics of the Hallertau carry hope for the new season that's still just a little too far away. 1.5L starter will give proper pitch rate. Use Coconut extract and Dark Cocoa powder like a dry hop and add after fermentation is complete. |

Was a bit worried that I added too many hops and it would transform to an IPA, but that definitely did not happen.
Slight hop aroma, but is nice. Distinctive bitterness, though not overwhelming. Smooth, dry, with a nice creamy head. The color is a dark gold and cloudy, especially when chilled. Refreshing, especially on a hot day. Overall a delicious, easy to drink, summer beer. A nice American pale ale with bursts of hop flavor. |

Notes: OK, the ibu's are defiantly beyond the pale, but it's less than the My Rye PA recipe and way less the the Hop Diggity Rye PA recipe.
The LME is Williams Brewing # M14 America Rye blend. This blend includes Pale malt, Rye malt and Crystal malt.
With 15 minutes left in the boil I turned off the burner a n d stopped the timer. I added the DME and Whirlfloc tablet and stirred until dissolved. I added the wort chiller to the kettle, turned on the burner, brought it back to a boil and restarted the timer. |
