Notes: was intended to use 1kg of light crystal for steeping but accidcently used a dark crystal with a EBC of 400! However as I steeped 1kg in 37 litres I may not have achieved all the flavour and colour from the dark crystal I actually used.
I also added 500 g of muntons spraymalt wheet to incease flavour and ABV so now I AM ACTUALLY BREWING A Dark and very full flavoured IPA. Dry Hopped for a few days
OG and FG were lower than expected so I have decreased projected efficiency from 35 to 10 |

The Tangerine Cream Dream offers creamy texture supplied by wheat extract, oat flour, and lactose. The lactose also adds sweet, sweet sugar that is mostly un-fermented by the yeast yielding that sweetness into the final product. The Hornindal Kveik yeast strain in this beer produces an intense tropical flavor and aroma with notes of fresh pineapple, mango, and tangerine. It complements the fruit-forward Comet hops added late in the boil and into the whirlpool for a heavy aroma boost. The big and brilliant tangerine aroma is the star of these Comet hops, grown in Central Minnesota The skin and juice of 2 tangarines add an additional citrus boost. The head on this beer is HUUUUGE (insert Donald Trum meme here). Overall this beer is a big bold statement... also like Donald's skin. LIGHTNING! LIGHTNING! LIGHTNING!
Extract brewing can be simple and rewarding! Note that while the equipment costs far less than the equivalent all-grain systems, the cost to let someone else create your extract over extracting the sugars from grains yourself is more expensive by about 20-50%. The cost per 20oz (one bottle) of beer for this Milkshake IPA is $2.42.
You may use tap water and/or modify the water profile.
The 2 tangerines or mandarin should be juiced and the leftover pulp/seeds should be removed from the rind. The juice and the rinds are added into the last ten minutes of the boil.
It is highly recommended that a blow-off tube is used instead of an airlock for this extremely active fermentation.
Higher fermenting temperatures benefit this beer as the yeast will produce more characteristic flavors. It is advised to ferment between 85-90f. To achieve a warmer fermentation, use a brew belt, heat mat, or similar equipment in conjunction with a temperature controller.
For a fermentation blow-off tube, run a section of the 3/8" ID Siphon Hose from the grommet on the lid to the bottom of one of the gallon jugs filled with sanitizer solution in tap water, and place the gallon jug and the fermentation bucket at the same height. It is best to elevate the beer at the beginning of the fermentation cycle with the spigot facing the area where you will be bottling so that the trub is not disturbed during the bottling process. In other words, try not to move the bucket just before bottling.
To bottle your beer, precondition each sanitized bottle with 2 Northern Brewer Fizz Drops. Attach a 5-8 foot section of the 3/8" ID Siphon Hose to the Fermenter's Favorites Bottling Spigot and the other end of the hose to the Fermenter's Favorites® Spring Tip Bottle Filler. Slowly open the spigot until it is fully open. Place the spring tip filler into the bottle and press the tip in on the bottom of the bottle. Fill the bottle until the liquid reaches the top. Remove the filler and the bottle will be filled to the optimal height.
Secondary fermentation in bottles takes between 9 and 13 days. 11 days is usually a safe amount of time to allow carbonation to build with the Kviek yeast used in this recipe.
Let the beer age for just about a week if kegged. It may very well be overly bitter and not well balanced the first day in the keg. If bottled, the beer should be ready after the 9+ days of secondary fermentation.
Don't forget to sanitize everything including the outside rims of the brew equipment and even the outside of the yeast packet. |

Notes: Having not had a Zombie Dust I cannot say if this recipe is a good match to the original but it is fantastic. Of the 20ish extract recipes that I have brewed this one is a favorite among my beer loving neighbors and it is my personal favorite. It has a permanent tap on my keezer and if you love the citrus flavors of american hops you should really give this one a try.
Slightly modified from original version of this clone recipe. Main changes are the steeping grains that were not available locally to grains that are very similar but locally available and changed the Safale-04 to Safale-05, just because I really like the 05.
Steep the grains in the mid 150s for 45 minutes.
60 minute boil, and add the extract at the beginning.

Notes: Place grain in bag and in 3gal.water.
Heat pot and stir every 5min.
Pull bag when water hits 170degrees.
As water begins to boil pull pot off heat.
Stir in malt extract and return to heat.
Bring to boil after 5 minutes start 1-hour boil.
Stir wort clockwise for 2min. Allow to sit for 10min.
Cool wort ot 170-175.
Transfer to fermenter and aerate for 1min.
Top off to 5 gal.
After 1-2 days. (When fermentation takes off) add brown sugar after dissolving into 2cups of boiling water.
After bubbling stops in air lock add dry hops.
After about 10days you should be ready to package.
When bottling add 4oz priming sugar to 1cup boiling water and add to bottling bucket. |

Notes: Belgian Candi a stand-in for 6lbs of bocheted honey; the different amount makes up for the greater sugar in the apple juice I used to reach the same OG.
Honey was bocheted on med/low heat over charcoal flame (grill) for ~1.5hrs, until very dark. Pasteurized apple juice (Kirkland brand) was used to dissolve the honey, and the mixture was added to the carboy with enough additional apple juice (5 gal total apple juice) to reach the final volume. Two packets of Nottingham yeast were re-hydrated in one small pack (~12g) GoFerm-PE, and pitched.
Fermaid O/K and DAP were added in staggered additions over the first week according to the schedule given by https://www.meadmakr.com/batch-buildr/: 4.5g Fermaid O @ 24 & 24 hrs, 5g Fermaid K & 2g DAP @ 72 hrs & 1/3 sugar break.
As my temperature controlled chamber was full, fermentation was carried out in a water bath/swamp cooler and further cooled with ice bricks. Over the course of active fermentation the temperature varied more widely than I would have liked, but stayed within 65f-80f.
Fermentation was visibly active during primary for ~2 weeks, and the must was racked to a secondary fermenter (onto 1/4 tsp of K-meta) after ~3.5 weeks. Secondary fermentation lasted a further 3 weeks during which Fermfast-Dualfine and Pectinase were used to further clear the must, though the Pectinase didn't seem to have any effect on a persistent haze and the Dualfine was particularly effective. At the end of secondary fermentation the must was cold crashed before being racked into a keg (onto a further 1/4 tsp of K-meta), carbonated, and bottled in 22oz longnecks.
The finished product is clear, the color of a bock or dark amber ale, and is very drinkable; while the bochet could have aged months longer, it still carries notes of dark stone fruit and toffee. |
