Notes: Place the grains in a muslin sack and then steep the grains in 1.5 gallons of water at 160°F (71.1°C) for 30 minutes. Take out the grains and hold them over the kettle allowing the remaining water to drip back into the kettle. Do not squeeze the grains. Squeezing the grains could result in bitter tannin extraction. Top up your brew kettle to 3 gallons and bring to a rolling boil (If possible, top up to 7.7 gallons and conduct a full boil). Stir in the malt extracts and bring kettle to a rolling boil. Boil for 30 minutes. Add 1.6 oz of Kent Goldings hops and allow to boil for 50 more minutes. Be careful when adding hops as you may encounter a boil over during the first hop addition. With 10 minutes left in the boil, add 0.5 oz of Kent Goldings. Allow the wort to cool and then pitch the yeast around 65° F (18° C). Ferment around 65° F (18° C). When fermentation is finished, carbonate the beer to approximately 2 to 2.5 volumes of CO2. A period of cold conditioning for several months will improve this beer. |

Notes: This is a perfect clone, I got my hands on 12 bottle of Fresh Squeezed and had some of beer loving neighbors over for a blind tasting. Of eleven tasters only two thought there was even a subtle difference between them and those two tasters both thought the clone was the original. They both chose the clone as the slightly crisper/fresher tasting beer. If the photo uploads properly you will see how much this clone resembles the original, the clone is on the left.
Mash Munich and crystal malts at 155°F (68°C) for 40 minutes, or until Munich malt reaches conversion. Drain, rinse, and dissolve extract completely before proceeding with boil.
Let the knock out (Citra) hops steep for 10 minutes.
Pitch cooled wort at 67°F (19°C) and allow temperature to rise naturally to 70°F (21°C). When fermentation is complete, dry hop in primary fermenter for five days.
Drink it as fresh as possible (~2-3 weeks after packaging) for maximum late hop character. |

Notes: Puree is with the raisins and whole leaf cascade hops, first mix them in second pot on stove with 12oz boiling water (when water boils, turn off heat source and add raisins and hops and let cool while stirring). Use food processor to puree this mixture to a thin consistency to add directly to the main boiling wort pot, 5 minutes before end of boil.
Aerate the wort in fermenter prior to yeast pitching very well, for 1 minute.
After 4-5 days when vigorous fermentation slows, add champagne yeast with yeast nutrient, brown sugar and dry hops (centinnial). Aerate gently. Let secondary fermentation go for another 2-3 weeks before bottling.
Bottle condition for weeks, age for a long time.
All brown sugar should be light brown sugar. |

Notes: Prepare a 4L yeast starter.
Mash the crushed grains in 5 quarts water.
Hold temperature at 150F for one hour.
Strain wort into brew kettle and sparge grains with one gallon of water at 170F.
Add malt extract and bring boil volume to 3.5 gallons. 60-minute boil. Add hops according to schedule.
Chill wort, pitch yeast starter, and ferment at 60-65F for one week, then transfer to secondary for two weeks. Bottle with priming sugar and condition for two weeks. |

Notes: Rapadura: An unprocessed Cain sugar with an incredible caramel taste and smell, some of which should make it to the final product (used in lieu of buckwheat honey to soften the bitter edge of the sorghum), and has a dark brown color.
Dry hop with 1oz of Cascade after about 5/6 days in Primary (or once activity has slowed stopped.)
Cold crash and fine with Gelatine after gravity settles.
This beer will be primed at the high end of the American Ale style if using the amount of Rapadura or cane or table sugar shown in this recipe. |

Notes: My OG was 1.094 and FG was actually 1.014, both at 70 deg F for ABV of 9.7%
I used 1.5 cans (3.3 lb / can ) of Briess CBW Munich LME, also used 1 can (1 Can for brewing 6 gal) of Vienna Lager HME (Oktoberfest) with Yeast provided with the Vienna Lager, about 1 Tblsp of Amarillo Hops pellets (broken up) which was added at the end of the boiling time to let steep with wort and added to fermenter for more balanced flavor.
Pitched yeast with wort / water mixture @ 90 deg F (approx) which makes the initial fermentation process very hot, so prepare to keep it cooled down. Fermentation finished at 14 days, bottled at 18 days with plain white sugar @ 1/2 recommended quantity. Nice carbonation, body, and balance. Hops are noticeable but not overpowering with smoky notes and an extremely nice finish--non acidic, not too bitter, not too sweet, not too dry, AND a nice KICK.. |

NOTES:
For yeast, I use 1 packet of Wyeast Cider Yeast 4766
Indian Summer Apple Cider is the preferred apple cider if using store bought. (Uses Vitamin C)
DIRECTIONS:
Add remaining apple cider to fermenter along with sugar. Oxygenate cider and add yeast packet. Stir together and cap.
Stir cider on second day to degass. Check gravity after 4 days, stir again to degass. Once stable, transfer to secondary, and let sit for an additional 2 weeks. Should be clear. After two weeks, add hops and dryhop for 7 days.
Cold crash for 24 hours, add to bottling bucket with dextrose priming sugar. Use priming calculator for exact amount.
