Notes: - Water used: North Yorkshire tap water.
- 65 min mash @ 65.5ºC (some small fluctuations, overshooting by 1º ish). Recirculating throughout.
- Sparge with around 2L of 65-70ºC water.
- 75 min boil: Chinook added after 15 mins, Lactose + sugar added after 65 mins. Do not add whirlfloc or Irish moss, this beer wants to be cloudy.
- After boil, top up with water if needed.
- Late hop additions (hopback) @ 85ºC for 15 mins, finally removed once wort was at pitching temp.
- 3 dry hop additions, first after 3 days in fermenter, second 3 days later and final 2 days after that. Each time removing the previous addition to avoid grassy flavours.
- Half a Vanilla pod added 2 days after the final addition of hops when all fermentation was complete. Leaving the hops in with Vanilla for 2 days before bottling.
Fermentation was in 10 days @ around 20ºC, might have dropped a bit at night so it could have finished in even less time.
I bottled using light DME spray malt, ideally I wold have used an extra light version to avoid too much discolouration. However the final product is a deep and hazy orangey-brown colour, reminiscent of freshly pressed juice!
Ultimately it smells, tastes and looks extremely professional. I would go with more lactose next time and maybe add Huell Melon to the hop profile.

Notes: *26oz of Marris Otter was Cold-Smoked for an hour with Mesquite Wood. It then was sealed in Mason Jars for 5 days to cure.
**7 Quarts of Mash water heated to 181 degrees and then poured into Mash Tun to temper for 15 Minutes. After 15 minutes the Tun temp was 171.
***After Dough-In the temp dropped too far down to 150, I added roughly 3 quarts of Boiling Water to raise temp to 158 degrees. Started timer for 60 minutes at this point.
****First Runnings were 1.077 on Hydrometer and 1.075 on Refractometer.
*****I adjusted Refractometer to Hydrometer readings and Pre-Boil measured 1.052 on both Instruments.
******Measured Post Boil Gravity at 1.067 on Refractometer, 1.067 on Hydrometer as well.
Checked Gravity on June 5th and it was at 1.023 for a ABV of 5.78% and 67% Attentuation. (It did take 3.5 days to get started from initial pitch). |

You can also do this as a true common/steam beer and pitch a lager yeast (I've used saflager) at room temps, much how California Commons like Anchor Steam are brewed. Dec 2014 update I'm going to suggest that everyone at some point try this as a steam beer...Lager yeast at room temp without lagering. I just kegged it, and even uncarbed it has an amazing flavor... steam beers, have an "off" flavor that is not as clean as a properly brewed lager...taste anchor steam and you'll get it, especially if you compare it to Anchor Lager. There's definitely a funkiness about it... something unique... Try it with this beer. It my be the permanent way I brew this beer from now on... I'll keep you posted...and if it works out, I may change the official yeast to saflager for this beer. If you try it this way, as a steam beer...especially if you've brewed it with ale yeast before and can compare it, I would love you opinion.
