Notes: Add campden when dry hopping to help scavenge oxygen.
Based loosely on Scott Janis's Simcoe/Mosaic IPA recipe, with some newer comments from him.
Second dry hop added when ready to carb. Drop to 58F for 2 days, dry hop and then carb and serve. |

Notes: The sugar will be added after we take the grains out of mash, we will whirlpool for about 10-15 mins to have the sugar dissolve and while heating up to the boil.
This will be split into two 5 gal carboys each getting a yeast starter with the English ale yeast packets.
**When taking the mash grains out there was a hole in the bag and we ran the pump through the hop basket to try and get the loose grains out of the wort. We also had to use a strainer picking up the floating pieces. Took about 50-60 minutes to take the grains out and the temp dropped down to about 120 degrees.**
When we finally got all the grains out we realized we had miscalculated the amount of water and added an additional 2.5* gallons of tap water.
After adding the sugar before adding the water we had 24 Brix
After adding the water before bringing to a boil we had 19 Brix
After boiling for 90 minutes we had 22 Brix (OG 1.092) |

Notes: Based on:
* Witney Brewston extract
* All grain "Blanche Oreiller" recipe and notes from https://byo.com/article/witbier-style-profile/
* https://beerandbrewing.com/make-your-best-witbier/
Instructions:
* Mill all grain (including flaked grain)
* Chill the wort rapidly to 20 °C, let the break material settle, rack to the fermenter and aerate thoroughly.
* Begin fermentation at 20 °C slowly raising temperature to 22 °C by the last one-third of fermentation.
Notes:
* Could add 250g rice hulls to help sparge (don't mill)
* First reference suggests starting with a protein rest (15 min @ 50C), then slowly ramping up to 68C over 15 min to start the sacchrification rest, but second ref says you get just as good results from a single temp mash. So lets start with the simple version and try the more complicated one later.
* The total wort boil time is 90 minutes, which helps reduce the SMM present in the lightly-kilned Pilsner malt and results in less DMS in the beer. This also means we go for a higher kettle volume to compensate for extra evaporation loss. |
