Notes: Important points: dry hop during fermentation, balanced 1:1 cl/so ratio in water. Be VERY careful with the Chocolate malt percentage when adjusting grain amounts for your system as it makes a large difference in flavor. Careful with mashing at 158, strike on the low side if not confident you won't over shoot (I did 167). Make sure you mash out to 170 after 60 minutes to retain body and head.

Brew as directed adjusting water with campden tablet and lactic acid before the mash.
The 30 minute hop addition is huge and all Centennial. It's a lot of vegetable matter...we'll see how it goes.
Double stepped starter of Bell's House Strain @ 67F. (Note the custom attenuation) Will probably ramp up to 70 after 48 hours of fermentation.
The first "Dry Hopping" is in the fermentor. Hoping for perma-haze from the biotransformation along with big juicy hop flavors.
The second dry hopping is in the keg with more Mosaic and Centennial Hop Hash. We'll see. Lots of firsts on this one. |

This Dogfish Head 90 Minute IPA Clone is created with a single infusion mash at 150°F (66°C) for 60 minutes.
Boil for 90 minutes. Combine all of your kettle hops into one bowl, weigh out 0.2 ounces (5.6 grams) of the hop mixture and add to the boil every five minutes for the duration of the boil.
Ferment at 72°F (22°C) until gravity reaches terminal. Rack into secondary and add dry hops for at least one week. Package and serve. |
