Notes: Make 1 gallon of wort with a gravity of 1.05 and add to 4 gallons of 1.05 gravity apple juice.
Aerate then pitch yeast. Ferment at 64 and increase temp 1 degree a day until fermentation completes.

Notes: First addition had 3kg honey 1kg sugar or something like that great mead type flavour and honey was there.
Second was sugar some candy sugar and Maltodexrine and 500g ginger and lemon myrtle all up.

3rd addition this will be fermented in a corny keg with floating pickup. So batch size will be 18lt reduced from 21lt.
I'll add lentils into a thermos flask and mash them sepperate for an hour at 86c with some Alpha Amylase enzymes for conversion and add this wort to the start of the boil.
This will be in place of maltodextrin and see if I get some head from it.
Instead of the candy sugar I'll add honey (winter honey)
The sugar will be as is standard cane sugar. |

| Notes: The yeast that I actually used was Danstar Abbaye Ale yeast, which was not listed on drop down menu. Also, I used real palm sugar instead of brown sugar as this was not listed on the drop down menu. I will ferment 2 weeks in primary and two weeks in secondary. Boiled and cooled honey solution will be added to secondary. Secondary fementation will also go for two weeks. This is a specialty Thai style ale that I created to experiment with these Thai spices. I'm hoping for good results. |
