Notes: I actually divide this up into two kettles - my 5 gallon and my 3 gallon, in order to hit my volume goal without loss of gravity by diluting.
(NOTE: obviously, if you have sufficient kettle volume, the only thing you need to worry about is the decoction)
While I've tried upping the gravity with reiterative mashing, as well as sparging in spite of the BIAB method (and these work somewhat) I have found my best end result is just to increase the amount of wort I'm brewing.
This brew includes a decoction mash of just under 1/3 of the volume into a third 2-gallon kettle. This is boiled for 15 minutes to really bring out the richer flavors of the malts used.
I suggest using different hops than citra; I am merely using up some stock here. I find Kent Goldings good for any British-style ale.
The star of this show is my favorite malt, Maris Otter, with a bit of caramel and honey malt for flavor and color.
This is a slightly bigger beer than traditional for a brown ale, but doesn't quite hit the level of a stout either. |

- Slow crash to 32 deg
- Keep at 35 deg for at least 30 days.

OD : 1,058 good taste, a bit dry but probably because of the hops in suspension.

**Final taste : un peu biscuit en fin de bouche mais goûte encore un peu trop le pain... Fermentation à 19 degrés. Prochaine fois, mettre un peu plus de special roast pour vraiment aller chercher plus le côté brown ale. 7/10 |
