Notes: Boil 60min, do not add finings.
At flameout, wait until wort cools to 180F, set timer for 40 minutes and add first hop stand addition. After 10 minutes and 20 minutes, respectively, add the second and third hop stand additions. After the total hop stand of 40 minutes, chill wort to 67F, decant starter, pitch and aerate. Over the course of the two week fermentation, ramp the temperature up to 73F.
On approximately day five of fermentation, when attenuation has reached about 80%, add the first dry hop addition. Five days later, remove the first dry hop addition and add the second addition and dry fop for five more days.
Carbonate to 2.5 volumes of CO2.

Notes: - I scaled the hops from 5gal to 6gal by increasing 20% by weight, based on the 20% increased water volume, not grain weight difference, which I increased by 40% (20% above the 20% added to scale to 6 gals batch) to get the ABV up a bit.
- Mill grain twice
- Don't leave heat on after meeting mash-in temp (163).
- Sparge and drain while boil kettle heats up.
While the grain is mashing, start the invert sugar.
- heat .6 lb of cane sugar (not table sugar) in .9 cup of water. As it’s heating, add .15 teaspoon citric acid
- simmer, stirring frequently, for at least 20 minutes. The longer it simmers the darker and thicker it will be; try not to simmer it for more than 30-40 minutes for this beer.

In FV for over six weeks before bottling, batch primed with 90g granulated sugar.
Very Bretty, harshly so after two months. Four months it has mellowed and developed a drier, balanced flavour. Aroma is pure Brett. |

♦ BREW DATES: I made it stronger than the perfect D6D recipe. I sampled it during the 4-day carb and it's good and strong. Maybe an average drinker wouldn't like it. Maybe too much victory malt. I think it will have a good reception once it gets a couple weeks on it.

Made with 2.6 pds Victory malt.
♦ SESSION NOTES:
Took my time on this one. Wanted to age it longer than normal. Did not dry hop the last stage. Glad I didn't. Has a nice balance. Color is to style. Very nice drinkable. Fermented 3 weeks. Forgot to take it out. Taste great so far at kegging.
♦ STANDARD BREWING NOTES:
♫Create 8 gallons sparge water. Bring to 154° strike temperature. Prime pump. Pump water through hose. Add tablespoon 5.2 pH balancer
♫Add 2 drops Fermcap before adding grain.
♫Add grain – Sparge at 154° for 90 minutes (Minimum 60) (One gallon loss during sparge process) Water burn rate: 1-1/2 gallon per hour.
♫Boil clean water for end of boil session adjustment. Adjust to 5.5 water line.
•Dark beers – Add x tablespoon Calcium Carbonate
•IPA beers – Add 5 tablespoon Gypsum for IPA
WAKE UP!!!!!!
15 minutes – Add immersion chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if fermentation tank nozzle is pointed upwards
♦ KEGGING NOTES:
Purge oxygen with CO2
Chill keg 24 hours before force carbonation.

Notes: -Off white persistent head. Deep amber color.
- Light dry body, toasty/malt flavor.
-No caramel/sweetness.
- Hops presence is low but crisp aftertaste.
- Moderate carbonation.
- An O-fest yeast can be substituted if you prefer a more malt flavor.
-Adjust the carafa or pale chocolate for color & more/less toast flavor.
WLP940 Mexican lager yeast is an excellent yeast for this beer. Crisp and very clean. Malt and hops shine.
4-6 weeks lagering balances out the malt and toasty flavors.
Sub 1 lb 2-row and add up to 15% corn, (~1lb) for a "Dos Equis Amber" but I prefer this beer without.
Mash-in 125. Heat to 147F – Hold 30 minutes. Heat to 162F – Hold 30 minutes. Heat to 170F – Mash-out temp |
