Use NW Pale malt!
Northwest Pale Ale Malt (2.6-3.0°L)
A slightly darker base malt than our Premium 2-Row, our Northwest Pale Ale Malt is produced from well-modified, Western-grown 2-Row barley, with a kilning regimen based closely on traditional British Pale Ale malting practices. Contributes a malty complexity to beer flavor and aroma. Excellent in American Pale Ales and American versions of British beer styles - See more at: http://www.homebrewstuff.com/pale-ale-malt-3-2-l-grain.html#sthash.nnPcFa1R.dpuf |

4/1/16 - First Brew Day
7.5g Strike - Hit temp pretty close. Lots of sticking in the mash, and had to play with the PID to handle the thickness. No yeast nutrient in the boil (forgot), lots of trub in the jars. Canned up and the trub seemed to clump up and drop down a bit, will have to test the first can to see how it does on target OG at 2L |

Using new burner/stand with HP regulator (2kg/hr)
Heated 46L water in kettle to strike temp 76°C. Took approx 20mins from 45°C.
Turn off burner, Remove kettle from burner.
Added all grain in double bag. (Next time calculate total volume in kettle including grain volume, add heated water when necessary once grain removed).
Mash grain with spoon.
Insulate with quilts. Mash temp start 72°C. 60mins.
Mash grain with spoon once at approx 30mins.
Temp 67°C at 0mins.
After removing grain bag, added approx 9L water, pressed grain bag to extract maximum infused liquid. Temp dropped to 58°C. Took 90mins to reach 100°C!
Start 60min boil, added hops as per schedule. A Hop ball started bobbing up, need extra washers or other method to keep near bottom of basket.
Added immersion cooler 10mins boil. Chilled wort from 100°C to 25°C in 20mins. (need to figure method to enable fitment of lid over piping and install cooler into kettle without hitting thermometer).
Transferred to fermentor with racking tube, 35L.
A lot of grain particles in solution, maybe from extra extraction with spoon?
Rehydrated 2 x yeast packs with 250ml water.
1052OG measured
Dry hopped 44g Cascade and 61g Mosaic day 10.
FG1008 day 13. Cold crashed @ 2°C for 5 days.
Kegged 2 x kegs day 17.

Notes: 1. Heat 8 litres of water to 75C in induction pot. Turn off heat and add BIAB bag, with the seam on the inside.
2. Pour in HALF the pale malt and flaked barley while stirring - get rid of lumps. Add remaining half and stir for 5 mins.
3. Check temp is 65-70: preferably 65-67C - adjust if necessary with cold water or add heat.
4. Wrap a thick towel round the pot and leave alone for one hour. Check temp is between 65-70c and preferably 65c- after half an hour. Stir. Add heat or cold water if not.
5. After 60 mins is up, lift out grain bag and put into colander above the induction stock pot, leaving the bag to drain for a minute or 2. Squeeze bag.
6. Use another 7 litres of bottled water and pour it over the grain bag. Leave 10 mins, stir, and strain the liquid to the induction stock pot. Should have about 13 litres, which will reduce when boiled for an hour.
Take pre-boil gravity following sparge and measure how much wort collected.
7. Dispose of grains, add all wort to pan and bring to boil. Boil for 40 mins then add 15g MAGNUM hops.
8. Boil for a further 10 mins then add 10g CITRA and 20g CASCADE hops.
9. Boil for a further 5 mins then add 10g CITRA and 20g CASCADE hops for final 5 mins of boil.
10. FLAMEOUT AT 60 MINS. When wort has cooled to 80C; add 20g CASCADE and 10g CITRA.
11. Pour wort into sterilised FV to cool (NO CHILL). Cover with lid. Once it has sufficiently cooled, add to a second sterilised FV via sterilised sieve to catch hops, and top up the level to 10 litres if necessary. Pitch 1/2 packet yeast at around 18 - 20C. Leave to ferment for 2 weeks at 18-19c in brew fridge. |

Notes: - "Double Double" = 2 malts, 2 hops
- Recipe origins: Stone Enjoy By clone
- I've made this in the past with Citra + Nelson. Trying out HBlanc since Nelson is worth its weight in gold-pressed latinum these days.
Hop amounts kicked up for DIPA:
- boil hops: 7g/L (5 in my regular IPA)
- dry hops: 15g/L (10 in reg. IPA) |
