Yeast is good for up to 90F, so probably no or minimal temp control, and need a blow off valve. BB date 01/2025, so used 8 ounce starter culture, rocking and rolling after 8 hours in the beaker, will pitch straight in once ready.
I had an extra .75# Pils so altered the mash bill to accommodate this. Originally has 8# 2 row, 2# pils & rye.
Mashed in for single infusion mash at 152F
took ph at 10m, got 5.6, added some acid.
took ph again, got 5.28
at about 90 minutes in, got 2x readings of 1.054. did 10 minute mash out, got 1.057.
Vourlauf : 1.057.
At this point I realize, I have not started the sparge kettle. Took about 30 minutes to get from 100-180F
Sparged to 8.1 gallons (also letting the malt pipe drain)
got 1.047. got almost 8.5 after malt pipe runnings.
ramped power up to 100 & temp to 198, held and began boil. Hop schedule started about 13:45
boiled 10 minutes and started hop schedule.
I inadvertently put the 10 min. hops in at 15 min. Caught it 2 minutes in, shortened the boil and last hop from 5 to 3
Hit 1.057 pre yeast pitch, 1.053 after. pitched at 82F
added 1.5# honey, got 1.059
First fermentation in the Blichman 14 gallon
Fermentation was intense and almost Kveik like. 24 hours after pitch, it was about 1.030. Later that day, it was in the 1.020’s at 88F, so I started both chiller circuits and cooled to 77F. This slowed the fermentation rate- but the blow off valve was still churning. Got down to 1.011-1.013 on the tilt and crashed it about 48 hours from pitching.
Will dry hop after either dumping the yeast or transferring to another fermenter.
Ambient temp was too warm to cold crash, never got below 40F and the yeast continued to work until 1.005 at about 40F.
Impressive. Of course, I harvested in case something interesting comes up soon.
Initial Tasting notes:
aroma is minimal; a hint of orange is all i get.
palette: Balanced, not residually sweet or overly bitter, but bitter enough to be easy to drink. Mouthfeel is good, as is the body, which belies the 1.005 FG. There is a slight spicy/grainy character to the finish; not grainy like 6 row malt, but in a flavor context. There’s a slight spice, but not peppery.
The yeast is barely noticeable, if at all. I get a slight aroma of orange and that’s it.
Revised tasting notes:
On the gas / in the keg for a few weeks, it’s a good beer. The orange aroma / flavor comes through nicely up front, as a ‘phenolic’ aroma, but calms down as the head dissipates.

Notes: 18 hour cold steep on Rst Barley & Carafa III. (2.5 qts wtr)
30 min rest with remaining grains at 145. (7.5 gal wtr)
30 min rest at 155.
30 min mash out with added cold steep grain/liquid at 170.
Hot batch sparge with 2 gal
Bring to boil
Add bittering hops
Dryhop after fermentation has slowed
Cold crash (with gelatin) for 1 day after 2 weeks
76% Attenuation finishing at 1.017 (ABV-7.61%)
Primed with 3.5 oz corn sugar
Pitched Champagne yeast rehydrated in 1 cup RO water
Yield 13L
Notes:
3.5 inches of trub, possibly due to not cleaning the mash kettle before boiling. Next time vorlof until beer runs clear then transfer the sweet wart to secondary kettle to ensure a cleaner transfer to fermenter much higher yield of 1+ gallons.
Question: How do grains in fermenter effect flavor? Which if any styles would benefit?
