Yeast is good for up to 90F, so probably no or minimal temp control, and need a blow off valve. BB date 01/2025, so used 8 ounce starter culture, rocking and rolling after 8 hours in the beaker, will pitch straight in once ready.
I had an extra .75# Pils so altered the mash bill to accommodate this. Originally has 8# 2 row, 2# pils & rye.
Mashed in for single infusion mash at 152F
took ph at 10m, got 5.6, added some acid.
took ph again, got 5.28
at about 90 minutes in, got 2x readings of 1.054. did 10 minute mash out, got 1.057.
Vourlauf : 1.057.
At this point I realize, I have not started the sparge kettle. Took about 30 minutes to get from 100-180F
Sparged to 8.1 gallons (also letting the malt pipe drain)
got 1.047. got almost 8.5 after malt pipe runnings.
ramped power up to 100 & temp to 198, held and began boil. Hop schedule started about 13:45
boiled 10 minutes and started hop schedule.
I inadvertently put the 10 min. hops in at 15 min. Caught it 2 minutes in, shortened the boil and last hop from 5 to 3
Hit 1.057 pre yeast pitch, 1.053 after. pitched at 82F
added 1.5# honey, got 1.059
First fermentation in the Blichman 14 gallon
Fermentation was intense and almost Kveik like. 24 hours after pitch, it was about 1.030. Later that day, it was in the 1.020’s at 88F, so I started both chiller circuits and cooled to 77F. This slowed the fermentation rate- but the blow off valve was still churning. Got down to 1.011-1.013 on the tilt and crashed it about 48 hours from pitching.
Will dry hop after either dumping the yeast or transferring to another fermenter.
Ambient temp was too warm to cold crash, never got below 40F and the yeast continued to work until 1.005 at about 40F.
Impressive. Of course, I harvested in case something interesting comes up soon.
Initial Tasting notes:
aroma is minimal; a hint of orange is all i get.
palette: Balanced, not residually sweet or overly bitter, but bitter enough to be easy to drink. Mouthfeel is good, as is the body, which belies the 1.005 FG. There is a slight spicy/grainy character to the finish; not grainy like 6 row malt, but in a flavor context. There’s a slight spice, but not peppery.
The yeast is barely noticeable, if at all. I get a slight aroma of orange and that’s it.
Revised tasting notes:
On the gas / in the keg for a few weeks, it’s a good beer. The orange aroma / flavor comes through nicely up front, as a ‘phenolic’ aroma, but calms down as the head dissipates.

I bought this kit from MoreBeer. The original name was StrataGem. I changed the hopping timing around to make it a bit hoppier.
Strike temp = 8.5 gallons at 157 degrees F. Mash temp = 150 degrees F for 60 minutes.
SG = 11.8 brix = 1.0475 g/L (7 gallons)
OG = 5.5 gallons at 15.1 Brix (1.0616 g/L)
FG = 1.011 g/L on March 7, 2021. Legged all 5 gallons.
Pitched Verdant IPA yeast (dry) directly into wort (60 degrees F). I will let it free rise. |

Notes: In preperation, we also require 4 Vanilla Pods, to be soaked in a sealed container with 200ml of Vodka for 10 day's minimum.
30 days for optimal performance.
Ferment for 10 day's with English Ale Yeast/American Ale Yeast with cleaner flavour.
Once krausen has subsided, rack to secondary.
Before racking, add 1.5kg of Raspberries with Vanilla Pod & Vodka mix.
This will cause a secondary reaction, should back off over 2 days or so. Once backed off, dry hop for 5 days.
Bottle or keg as required on the 5th day. |

Notes: Eff was huge with 80% but that could just be due to the juice of the 4 oranges. OG 1.053 I then watered down to 1.050 so the yeast wouldn’t struggle to hard. Ferment temp started at 24/25 but dropped over night a touch over night to bang on 24. After 12 hours ferment was roaring and bubbling away like crazy Unfortunately the ferment temp got up to 27 so I put in a water bath but could only get it down to 25.5/26 until later that night and the following day where it went to 22/23 Great beer!
