Notes: This recipe is loosely based on a kettle sour with the addition of some light caramel malt to add residual sweetness. This was in place of the original recipe using ketchup and tomato puree at kegging. The recipe writer says the purpose of the ketchup is to soften the tartness with the ketchup's sugar content.
Note two tomato additions, the 6.6# is tomato sauce, the 138 oz. is fluid ounces of tomato juice. The sugar addition is to account for the sugars in the sauce and juice.
I will adjust the tartness of the finished beer using lactic acid to achieve the desired tartness.
Additional smoke flavor can be added with liquid smoke on finish if desired. |

Add yeast nutrients at different steps. From Northern Brewer:
Anyone who has ever stirred a fermenting beverage knows the foaming, triggered by the release of CO2, can make one heck of a mess! To help minimize this, you should mix the nutrient blend into ½ cup of must and add it back to the fermenter. Then begin to slowly stir the must to release the main portion of the CO2 gas. After the foaming has subsided you can begin to stir more vigorously. Mix the must well enough to introduce plenty of oxygen into the fermenting must. Oxygen is needed by the yeast throughout the growth phase. Oxidation is not a huge concern until you get past 50 percent sugar depletion.

From Fifth Season Gardening: Fining with Gelatin: (per 5 gallons of beer)
Add ¼ to ½ cup of cold filtered water to a sanitized measuring cup
Add ½ teaspoon of gelatin on surface
Let sit for 10-15 minutes to partially dissolve
Heat water to 150-155 °F (I usually do small 5-10 bursts in the microwave. You may also heat the water by adding very small increments of boiled water) DO NOT BOIL THE WATER, you will make Jell-O instead.
Stir and test temp with sanitized thermometer
Pour into fermenter or keg. Use care in avoiding unnecessary cold side oxidation.
Allow 24-48 hours to work its magic prior to packaging or serving.

Pitch yeast at 65F and raise slowly up to 70-72 over the week to encourage full attenuation.
Freeze strawberries for 5-6 days prior to being ready to use them. Thaw until strawberries are about room temp the day of putting into secondary. Let secondary sit for about 7 days or until fermentation has finished. |

Notes: WLP 645 Brettanomyces Claussenii and White Labs French Saison pitched together. Brett C is fruity with no barnyard or poop smells. Adds great complexity and prolongs the longevity of the packaged beer. All my Saison are getting Brett C in the primary or added to the secondary split batch. 5 gallons split into two 3 gallon carboys. One getting brett C the other not. Usually always end up liking the Brett version better.
