Every year on my birthday I brew up a Barley-wine, but then have to wait several months to drink it, way after my birthday. So, this year I brewed a Wheat-wine (Barley-wine with a large proportion of wheat) six months before the date to make sure it was done in time. It was done nice and early…too bad it didn’t last! I heard the term “Wheat Wine” thrown around, so I did some research on the topic/style. The best resource I found was “Brewing with Wheat” by Stan Hieronymus. Chapter 11 is entirely on the subject, and titled Two Recipes for Wheat Wine (pgs. 141-145). It’s a fun “Style” in progress, so feel free to do what you want with the recipe: Ferment with any yeast or different types of Wheat Malt… Also, Wheat-wines will age differently and quicker then normal barley-wines… probably because of the wheat!

Notes: I used Jamil's Robust Porter recipe as a base, added a half pound of Munich when Northern Brewer told me they didn't bill by the partial pound so I rounded up... Hops are leftover stuff from the freezer and a bunch of wet hops I picked this morning... I planted Cascade, Willamette and Fuggle, but they've grown into each other and gone crazy, so a mix it is!
I tried to edit the AA of the hops to account for their age, I actually used 4oz of 5% EKG that were unsealed and about two years old. My hop degradation calculator tells me the AA should be 3%... so I added another ounce of 6.2% EKG that were still vacuum packed. the IBU's should be about 40, which I First Wort Hopped.... |

Mash at 152F for 60-75 minutes. Boil, chill to 60F and pitch. Ferment for 14-17 days at 60F, rack to secondary and let sit for another 7 days at room temps before chilling to 40F or so for another 7 days to help clear the beer some and help the flavors meld. Bottle and let sit for 21 days at room temps (68-72F). Should yield around 5 gallons or so from the 6.5 gallons that went into the fermentation vessel, so keep that in mind when calculating CO2 levels. |
