410 is slightly undercarbed. Really complex, fruity, tart, dry, and refreshing. Might be outstanding with a touch of spicy-grassy hops or a touch of pine, maybe some nutty, bready malts to balance the tart fruitiness and add some body.
---
9.01.14
Both 1010 and 410 are delicious in their own right. The 410 has more yeast character. It's tart, dry, refreshing, and gently spicy. The 1010 highlights the hops, fruity, citrusy, dry, and more mild on the yeast notes. I would make both again, or continue to do this split batch and fiddle with ferm. temps, hops, or grist.

No reason for notes on this sucka, we hit our marks! Likely hit about 75% efficiency. Got an extra half gallon of wort that we used for an experimental batch:
.5 oz Sorachi Ace, .5 oz Nelson Sauvin @2 min.
---
"410 works wonderfully in the production of Belgian wits & wheat beers. It is a strain capable of producing a range of complex flavors, from fruity estery notes at higher temperatures to light phenolics and tartness at lower temperature fermentations"
Split batch: WLP410 (67-74) & WY1010 (58-74)

-Ferment in low to mid 50’s for 7-9 days, then let temperature rise to room temp over the next few days to let yeast finish out and consume diacetyl. The max temp I let this get to near the tail end of fermentation is 68f. Straight from the fermenter, it tasted wonderful, but I enjoy aging my lagers to help with clarification. One thing I would possibly change is the hops.

| Notes: If you don't have whirfloc use irish moss. Carb to 2.5 volumes of C02. Add sugar in the last 10min of the boil. For the thing marked "whirpool addition" just cut the flame after you have boiled for 60min, throw the hops in, and let it sit for 15min. It's basically steeping it. If you aren't going to make a starter use 2 vials of yeast. |

Notes: No boil, no sparge, no chill. Pasteurize in the MLT, transfer to a bucket & let cool to 95F in the fridge before shaking to aerate & pitching the lacto. Put regular tap water in the HLT (save on water).
Try to hit 10 MC/mL for Lacto (225 BC - 1.2 MC/mL/P) & 4 MC/mL for Sacch (90 BC - 0.5 MC/mL/P).
Grow Lacto in ~1.2L starter (@1.020) for 5-7 days at 80F to hit proper pitching rate. Just pitch a pack of the yeast, no starter required.
Pitch the lacto 48 hrs early at 70F, then pitch 1007.
