Notes: Accidentially left .5 gal star san in fermenter. To correct added 1 lb lactose to add some body and cover up strong grain flavor left presumably by the low pH produced by the star san. The correction resulted is a very sweet beer. To further correct the following beer was made to blend and reduce the sweetness.

Notes: Recipe slightly modified from http://wiki.homebrewersassociation.org/SaisonDuMont-AllGrain
Used Mt Hood (15 min) instead of Hallertau Mittlefruh because I had it on hand already
Forgot to add Irish Moss, Coriander
----
Notes:
Added orange peel at the flame out as the recipe called for, but wasn't sure if they were supposed to be left in the fermenter, so I strained them out when transferring to the fermenter.
During boil, topped it up to 20 quarts since mash efficiency was low.
FG 1064 at 75.5 F
Monday Feb 13 9am Fermentation started, temp of closed water jar was 77.0, fermenter thermometer sticker reads 78 and the open-to-air blow-off reservoir reads 76.0 F. Turned thermostat down since it seems too warm in the bathroom.
Monday Feb 13 5PM Sticker thermometer maxed out (greater than 78 F). Closed water jar reads 79. Turned down bathroom thermostat more and opened door for 30 seconds to cool off the room. Fermentation still rapid but has slowed some since 9am.
Tuesday 7pm Fermentation slowing (1 burp every 1-2 seconds). Clsoed jar 75.8, sticker 78, ambient room temp 73.6
Wed 8:30am fermentation continues slowly (burp every 3 seconds). Sticker reads 76, thermostat set to just above the middle of the 60-zone. Turned thermostat down slightly.
Wed 10:30pm sticker 74-76
Thur 8:50am sticker 74 degrees. Turned dial up slightly
Friday-Tuesday The thermometer sticker very consistently reads 72 degrees
Sunday, Feb 26 - Transferred beer to keg. FG 1.010. Beer is extremely cloudy, very bright -- looks very similar to orange juice. Also put a pint glass full of it in the refrigerator to see if the cloudiness will drop out of solution with chilling.
Tuesday, Feb 28 - Pint glass in refrigerator is a brilliant ruby orange-red. Clarity still not great, but it looks so much better than before. |

Notes: 1) Add 8 quarts of 165 degree water to start mashing the whole grains (German, 2-row, wheat, and American) in a steeping pot as free grains, not in a bag. Should make ~2.5 gallons of mash, maybe a little less.
2) Steep for 60 minutes (or more). Raise temp to 170 for 10 minutes to finish the mash.
4) Cool to 115. Add a reserved handful of grains, and a couple of raw cherries. (To add bacteria.)
5) Ferment for ~3 days, keeping as close to 100 - 115 degrees as possible.
6) Strain grains out into muslin bag, into the boiler. Sparge with 4 quarts hot water. Add hops, malt extract, honey, boil for 60 mins.
7) Strain out the hops, and pour the wort into the primary fermenter. Ferment 5-7 days.
8) Washed and lean the cherries. Mash them up, and add to the 2ndary fermenter. Rack the beer onto the cherries.
9) Let ferment another 2-3 weeks. Strain any floating fruit bits off the top. Rack into a bottling bucket, and bottle.
10) After conditioning for ~2 weeks, it might be good to store in the fridge for a couple of additional weeks.

| Notes: This is my take on Westvleteren Blond. It uses their yeast, grist and temperature schedule(for fermentation), but different hops. If you've read multiple of my recipes you may have realized that I am in love with Ultra hops. They are a Saaz and Hallertau hybrid. My two favorite hops to begin with. A blend of those would work fine if you can't find them at the LHBS or you could used your own favorite and make it your own beer! To increase grassyness in accordance with the original beer I use them for bittering as well as aroma and add the sugar to the start of my boil to lower hop utilization so that more hops can be used while contributing less bitterness. First wort hop and boil for 90 minutes or more. Moon Hooch is a great band and the beer is named after them. |

Based on the popular YONA YONA ALE from Japan.
Yona Yona (“Night after night” in Japanese) pale ale is a medium-bodied American pale ale with a generous amount of cascade hops. Citrus flavor from premium Cascade hops and well-balanced bitterness and sweetness are its main character.
