Notes: Be sure to use Crisp Pale Chocolate to get more chocolate flavor rather than espresso and roasty flavors
Roast cocoa nibs 5-10 minutes at 300F until oven smells very chocolaty while racking into secondary, add nibs right out of oven.
May add 1/2 post of dark roast coffee in last 5 minutes of boil
3.5 oz Maltodextrin last 10-15 minutes boil to improve mouthfeel
Sub Lactose for a more milk chocolate flavor
May use 75 minute boil to provide more caramel flavor
May use English Ale yeast for more residual sugar for fuller flavor and mouthfeel
Standard 2 week ferment
May increase black malt up to 5% for more dark chocolate flavor
May use East Kent Golding rather than Fuggle. Fuggle used here as this is the base for a adding some mint as well. |

Friday 9th November 2018
Mashed in at 66C with 22L. Mash pH at end of mash = 5.25. Sparged with about 8L of 55C water. Boiled for about an hour
OG = 1.062, pH = 5.16. Cooled to 20C and pitched 800 mL of a gen 1 WY1318 starter (pH = 3.8-3.9ish and tasted clean)
Wed 21st Nov - FG = 1.018, pH = 4.37. Kegged using CO2 transfer. 5.9% ABV
Initial tasting notes - too sour, too roast / acrid... hope it mellows out. Maybe worth a pastry addition too fatten it up / take off the edge
It might just be the roast character, but feels thin, needs more body, creaminess |

10g chalk + 8ml LA to mash, 2g chalk to sparge.
2.5 year old Warrior hops = much lower bitterness than estimated? As low as 25 IBUs.
Significant autolysis flavors - believed to be from sitting in primary for 2 months at high ABV.
Autolysis update - extra yeast in fridge also seemed to kill itself with no extra effort, which makes me think the yeast was stressed to begin with and not the fault of sitting in primary, although it didn't help. |
