| Notes: Mash at 150°F (65.5°C). Using lactic acid, adjust mash to achieve 5.1–5.3 pH. Dry hop when gravity falls below 1.020, but take caution as nucleation sites may cause a geyser. Start with a few pellets, let the CO2 settle, then finish the dry hop under positive pressure. Do not remove yeast. After 7 days on hops, crash beer to 32°F (0°C) and hold for 4-5 days before racking to keg or bottling. |

Notes: Ferment with normal pitch of Trappist HG, and then one day later pitch both 1098 (English Ale) and 3711 (French Saison) to improve esters.
Add brown sugar and Belgian Candi sugar at 1 minute.
Oxygenate wort on the first pitch, and again on the 2nd pitch.
Should be ready to drink in ~20 days

Notes: I have another recipe based on New Glarus's Spotted Cow (in the clones folder), but I'm doing this one first because it's simpler and doesn't have any adjuncts which I don't think add anything anyway.
I typically don't like cream ale. It's a style that's trying to be an American lager with ale yeast. i'm making this more of an American Helles while still fitting the cream ale style guidelines which are very loose so it works out.
Originally I made this with SafAle US-05 which is probably the most legit yeast for American Cream Ale, but next time I might try it with 34/70 or K97. In the end it was very lager-like and clean. |

Notes: This mash makes 17 gallons of 1.047 wort. Split it into 3 different boils.
Boil 1: "Marsen" 7g + 1g Hz0 boils off to 6g @ 1.055.
This beer gets cold steeped;
*Caravienna @ .33 lbs
Boil 2: "Weed wacker Ipa" 6g+ 1g Hz0 = 7g @1.040 - reduces to
6g @ 1.047
Boil 3: "Lawn Mower Ale" 4g + 3g Hz0 = 1.026 which reduces to *5.5g @ 1.033

| Notes: Why? Why not? No one really makes a single hop DIPA and lives to the tale. The recipe is pretty standard. It's designed to be a study on Moutere hops. Everything is within spec for the BJCP guidelines. Moutere is brand new to the market. Characteristics of: grapefruit, tropical fruits, passionfruit, hay, pine, and baking spices. The hop has a massive oil content of 1.5-1.9. Furthermore, high alphas and low cohumulone make it good for bittering as well (hence no bittering addition). Could be fun to brew! |
