preferably as low as possible, thrives best at 15-17 and then warmer after main fermentation.
Stored cold for 30 days.
Ferment the beer at 60°F (15°C) or as close as you can get to 60°F (15°C). Once the fermentation is complete, find a cold place to store the beer for a few weeks. A lagering period will help the beer if you can do it, but don’t sweat it if you can’t. |

Pitch at 9C, set chamber temp to 10C. At 50% attenuation start a slow ramp up of the temperature 1-2C every 12 hours until we hit 18C. Hold here for 4-10 days.
A day or two after hitting FG start ramping down the temp in 1-2C increments until we get as low as the fridge can go.
A day or two after hitting the low temp, gelatin fine and keg after another few days. Lager until a spot in the kegs fridge opens up. |

Notes: Mash Tun has a 9F temp loss on dough in. Make adjustments to hit 142 mash in temp with second infusion producing a step rest at 156.
Use a step mash with 45min rest at 142F 15min rest at 156F. Boil for 60.
Estimate kettle loss of 1.5gals to get 5 gals in the fermentor
Pitch yeast at 52F, Ferment at 54F until 66% done then finish at 57F. Gradually drop temps 2F until temps are at 43F, then rack off to secondary for lagering for at least 6 weeks. Carbonate to 2.5 vols.
This beer is dryer than some modern versions.
Use a clean lager yeast. |

Notes: Czech lager with initial hoppiness if tasting too early!
Initial hop-bite will diminish with lagering and final result is a perfect balanced lager. Takes about 2-3 month for beer to mature to perfection.
Instead of Carafoam, use Best Chit Malt for nice foam and body, same amount.
This beer benefits of Decoction mashing (quick style: pull out 2kg thick mash and boil separately on the stove for 10 minutes while @ 63*C Mash step, return to mail mash and repeat @ mashstem 70*C
Gives a somewhat darker colour to the beer and a hint of diacetyl to finished beer.
Fermentation:
10-12 *C for 5 days (50% attenuation)
Rise to 17*C, rest for 2-3 days
Lower to +1*C during a week and let sit at 1*C for about 2 weeks (lagering)
If fining with gelatine, add at 10*C.
Bottle prime and let sit for another 2 month and Enjoy!
If using Saflager 34/70, ferment at 12*C and give an extra day for yeast to get going.
