Notes: Attempted to mash on Friday and boil on Saturday. Rinsed mash tun out and put still-warm wort in to try to retain heat overnight. Rested at around 40. Next day the wort was still 32C. However it looked strange, smelt like a strong honey and tasted a little sour. Infection, probably lacto.
Boiled and hopped it anyway, in the hope that the boiling (75mins) would rid it of any nasties. Boil went fine, but finished product still has a sourness to it.
Yeast pitched. To test when fermented out. Options then: dry hop; rack onto some brett; throw away.
Fermented for quite a long time - 11 days. No activity for 3 days, so on Sun 1st Feb I racked off to secondary. Took sample and tasted. SG 1.016 Contiunues to have all the qualities of a sour in terms of appearance, aroma and taste.
Decided to rack onto a fuckload of hops anyways.
Options - bottle all in 7 days; bottle half and rack half onto some Brett, and leave for a few months....
Chose to bottle half and rack half for a further long feentation on some White Labs Brettanomyces Lambicus |

Notes: 2L starter x 2days. Decanted off starter beer. Added 1 pack US-05 (and included extra mash step at 148) to account for 1084's poor attenuation. Next time, will decrease lactose to 1.5 lbs. Too milky for my taste, but folks love it. Super creamy! Also will slightly decrease Magnum hops to around 22 IBUs.

Notes: Roast 1-lb organic pecans until aromatics are released; grind coarsely and add to mash. *
Use light or medium unsulphured molasses at 5-minutes left at the end of the boil. Do not use blackstrap. Approximate usage 0.5lbs or 2/3 cups of molasses.
Scrape interior of (1-2) Grade B Madagascar Vanilla bean into bottom of secondary fermentation vessel and rack beer on top of vanilla for 7-14 days or until desired flavor is achieved.
* Pecan Prep
Pecans are oily and that can have an effect on head retention, texture etc. so it is crucial to remove as much oil from the pecans as possible prior to brewing with them. Crush pecans and cook at 315F for 10-15 minutes. A food processor works really well for the crushing. To squeeze out oils, place in paper bags and let them soak or place under paper towels and place weight on them. Repeat this process as many times as necessary.
Alternate: Use 4oz. of Brewer's Best Pecan All-natural flavoring

Notes: This beer was brewed as a 10 gallon batch and was fermented using Danstar Belle Saison dry yeast. Fermentation kicked off vigorously within hours.
After only one week in the primary at 78 degrees this beer fermented down to 1.001 and tasted great. I'll let it sit in the secondary for a couple weeks then bottle and keg around 7/25.
To clarify, the name "sweet as" comes from New Zealand slang since I'm using all down under hops. The beer is intended to finish very dry, not sweet, but it will be Sweet As!
Next time I will reduce the fermentation temp a couple degrees and I will also use seeds of paradise instead of orange peel and coriander. |
