55 grader i 15 min (proteinsteg)
63 grader i 30 min (beta-amylasesteg)
72 grader i 30 min (alfa-amylasesteg)
77 grader i 5 min (utmesk)

Approximate ABV at bottling: 6.8%
Bottle fermentation may raise it to around 7%
Time to bottle
Beer advocate says - "The bottle carbonation process is a controlled fermentation of ... especially highly carbonated saisons, the abv goes up about .2 - .4 % abv."
Fruit Iambic 3.0 - 4.5 volumes which translates to DME: 8.8 oz.
This batch produced 5.7 gallons with minor loss including a snapped bottle neck
Yield in containment:

2nd iteration, upping fruit/hops by 2x, volume/grain by 1.6 for a bit more flavor. Going from 100% mosaic/mostly mango to 50% mosaic/amarillo with half/half mango and peach.

This is mostly inspired by Gun HIll's Mosaic Soft Serve (3% ABV, oats, lactose, delicious), and Mad Fermentionist's Mango Vanilla Hopsicle.

Initial Mash temp was too low so added an additional 1.5 gallon boiling water to raise it, ended up raising higher than expected. Also ended up with almost 14 gallons of wort, too much to boil down in my small brew pot, we only managed to boil about 9.5-10 gallons.

Notes: I did a test this time (will call it that) everyone has been sick , me no exception, very tired and lazy so wasn't prepared and didn't make the needed starter. so decided to pitch 3 wlp090 yeast and hope for the best, didn't use my fermenter in water either just put in a room where the air temp was around 65 and of course had to shake it twice yeast just dropped to the bottom then after the second day took off bubbling about every 1/2 second for 3 days and still going but now at about 1 second, the smell out of the airlock is of hops and some yeast, I call that good lol
update, I guess dry hopping would be better after all the hop flavor while not bad doesn't jump out at me and make me want another and another, will be keg hopping this one!, after keg hopping with the hops cascade, amarillo and simicoe all mixed together, keg hopped this for 1 day in the keezer with a course bag in 1 keg. I took the keg and filtered it with a 1 micron filter because the hops flooded the beer, then I mixed the 2 together and wala a very very dry hoppy but good tasting beer, this beer is higher in alcohol than I anticipated, I will definably be brewing this again |
