Notes: Used 1.5 pounds of Candi Sugar and substituted Abbey Malt for the C-10 due to availability at the LHBS.
At bottling, added 140g table sugar and 2g fresh yeast, conditioned for three months.
Tasting notes:
At bottling: peppery with bubblegum, small hint of clove and nutmeg.
At 3 months, very mild, some lingering sweetness but still very light in body. Highly carbed (as designed) almost to the point of champagne. The bubbles last the entire slow glass.
Due to the high carbonation, bottled in half-champagne bottles procured from Curds and Wine in San Diego, CA. |

Notes: Bakke Brygg Mild Jul er en maltfokusert, men drikkbar ale i landskapet mellom en engelsk mild ale og en engelsk brown ale. Ølet har en relativt lett kropp og et maltpreg med hint av nøtter, toffee, tørket frukt og lysrøstet kaffe, balansert av et mildt, jordlig humlepreg.
Dette ølet kan være drikkeklart på et par uker om du tapper på fat, eller 3-4 uker om du tapper på flasker, og er dermed et godt alternativ for deg som er litt sent i gang med juleølbryggingen. Ølet fungerer også godt som en avveksling fra de kraftigere og tyngre juleølene. Brygg denne som en del av førjuls-sysselen!
Pitch gjær på 18 grader. Gjæring på 19 grader til stormgjæring roer seg ned (tar typisk 2-4 dager), deretter 21 grader i 5-10 dager. Vi anbefaler minimum 10 dager total tid på gjæringskaret, men eksperimenter deg gjerne noe mer nedover hvis du føler du har god kontroll på gjæringsprosessen!

Notes: Rehydrate yeast for 30 mins. Oxygenate wort for 30mins. Ferment at 18.5c. Dry hop close to end of fermentetion. Chill at 2c for 4 days then rack to keg. Carb to 2.2 to 2.5.
Key here is to get the mash PH down to between 5.2 to 5.4.
Mash for 75mins@ 67c, mash out 76c 10mins, sparge 10 mins, boil 90mins.

Notes: Oxygenate during knock out @ 70 degrees F. 400ML 1056 slurry from Get Sum. Water back to 14.5 gallons. No mash salts, only gypsum 1 tbsp in kettle. Yeast nutrient sprinkled in kettle @ whirlpool.
FERMENTATION NOTES**Huge Krausen**
Activity 3 hours after pitch, 70-72ºF first 24 hours. Fridge died 24-36hrs 82ºF, 36-48hrs fridge cooled down 68-70ºF, good fermentation for 8 full days.
Pulled yeast and dry hopped day 16. FG 2.9ºP

Notes: American Blend is usually a blend of Cascade and Centennial. Have used Amarillo, Mosaic and Falconers Flight with good results. Just not an overpowering hop like Citra or Chinook.
Hop stand hops go in @ 180°, continue cooling until 165°, whirlpool for a minute and rest for 20 minutes. Continue to cool to 65°, transfer leaving Trub behind, aerate and pitch. Keep fermentation @ 65° for 3 days then raise to 68°. After 1 week, raise to 70-72° for another week. If you cold crash, make sure to prevent any oxygen ingress. |
