Notes: Easy drinking Rye Pale Ale. You can taste the spicy rye, but it is not overpowering.
Grind the wheat separately and add to your mash after the grain bed sets to avoid clogging your pump during recirculation. I continuously run a slow recirculation during the mash to obtain higher efficiency as well moderate the temperature within my mash temperature range. This recipe calls for 4lbs rye but I only had 3lb 10oz so be it... never exceed 25% of your base grain with rye. I also have recently lowered all mash temps across the board to no higher than 150F with a target of 148F - it works better.
Chemical additions are to get pH of my water to 5.4, typically that requires 1 teaspoon tartaric acid to the HL and nothing to the mash (use acid of your choice ... if needed). I typically measure the mash pH and the hot liquor pH and then make adjustments as needed. The idea is if mash pH is 5.4 I want my HL pH 5.4, if mash is 5.6 then I want my HL 5.2... to balance your alpha and beta amylase. I also add the salts and gypsum to get the water to have a better mouth feel. EBMUD water is highly filtered so it is clean but it has "less" in it.
Dry hopping (optional) I add when Krauzen drops and leave it for about 3-4 more days, then take a measurement to see where it finished.
