Notes: Preheat the oven to 175 degrees. Place the honey in a sanitized, oven-proof saucepan. Heat the honey on the stovetop to 175 degrees. When the honey reaches temperature, cover the pan and place in the oven. Hold at 175 degrees for 2.5 hours. Bring the honey to room temperature by placing it in an ice bath.
Now add the honey to sufficient boiled water to match the starting specific gravity of the beer. For an OG of 1.05, dilute 500g honey in 1L water. |

Notes: Steps directly from the original recipe. I have adjusted mine for a 5.5 gallon batch.
Mash grains at 152°F (66.7°C) for 60 minutes. If including a mash out step, raise temperature to 168°F (75.6°C) and hold for ten minutes. Sparge with 168°F (75.6°C) water to collect 6.53 gallons (24.7 liters) of wort.
Bring to a boil and add hops as indicated. At flameout, stir wort to cool slightly and add whirlpool hops. Let rest for 20 minutes before chilling the rest of the way to pitch temperature.
Pitch yeast. Ferment at 60–62°F (15.6–16.7°C). Add dry hops towards the end of active fermentation, when specific gravity is around 1.020–1.024 (5.1–6.1°P). Let rest for four days or until fermentation is complete.
Cold crash to drop hops out of suspension. Rack to secondary or keg. |

Notes: FG of a degassed (vacuum) sample of Drakonic is 1.017 which would indicate an approx OG of 1.084 with 8.75% & WL 001 yeast.

3/16/17 Brew day: actual mash temps performed are above and main mash Ph was 5.55. Batch sparge was 5.68 Ph. Resulting wort was 5 gal at 1.047 OG for a 65.33% efficiency. Final vol 1.5 gal at 1.106. 70 IBUs Following day read 1.75gal at 1.116 so I diluted with boiled RO water to 2.2 gal at 1.092 and 45 IBU's Added DAP nutrient and shook it up well. BTW Nottingham says on the packet that aeration is not required. I just didn't want a stuck ferment on such a big beer, haven't had one that I recall but I've been brewing 10 years.
3/20/17 Update: The ferment was pretty crazy, luckily it was a small volume in a large container. It tastes sweet but my sample reads 1.014 adjusted which means I have achieved 82% attenuation and 10.2% ABV. Biggest beer I ever made! Planned OG was 1.085 and 40+ IBU's with a BU/GU ratio of .48; I now have a .50 ratio. Not to goal but a good achievement. I would bitter this to 60 IBU's at least if I planned this OG and attenuation.
4/24/17 Update: FG is 1.013 which gives 10.32% ABV. At racking the brew smells somewhat reminiscent of Drakonic but I have little care if it is since it's a different beast. More roast I desire...Lots of booze and some esters present. Can't wait to get my ferm chamber all set up. |

To get that “Guinness tang,” try this. After pitching the yeast to your stout, siphon 19 oz. of pitched wort to a sanitized 22 oz. bottle. Pitch bottle with a small amount of Brettanomyces and Lactobacillus. Cover bottle with aluminum foil and let ferment. When beer in bottle is done fermenting, pour it in a saucepan and heat to 160 °F (71 °C) for 15 minutes. Cool the beer and pour and pour it back in the bottle. Cap bottle and refrigerate. Add to stout when bottling or kegging. |

Notes: This is an attempted clone of Whistler Brewing Companies Bear Paw Honey Lager my brother had when he was up there. Based on what he said, this recipe gets the color and clarity exactly and the flavor is pretty close.
My OG ended up being 1.049 after adding the honey during the boil and the extra .75 pound in the fermenter should raise it by a few points.
I added the honey straight onto the krausen during day 6 of fermentation and let it ride for 5 more after that.
Used 2 tbsp of biofine in the keg. |

Smh I didnt check my volume plan. Started with 12 gallons and boiled down to 10. Shouldve collected more and ended at like 11. Was only like 8 gallons in fermenters, topped with water to even 10 before taking gravity measurements. For mash, 154 strike water equaled 150 mash just like on 5 gallons.

Listening to homebrewhappyhour episode with Rob from Pixel Perfect Brewing, he highlights a couple things that he says helped his octoberfest. fermenting under pressure, and decoction mash. he actually did the decoction on an extract brew with specialty grains. also he did 6 weeks conditioning.
this brew i thought was really good as is, and it was indeed a gold medal winner. but possibly adding these three techniques could make it even better. push it to BOS status.
also, judges said it was low carbonation and needs more head retention. touche.

altered from Drew's March Beer from sept 2019 byo. i changed the hops to get rid of first wort hop addition and to use a single hop, in even oz amount. confirmed recipe uses 1.5 qt/lb mash. the MUNICH/OKTOBERFEST YEASTS REQUIRE DIACETYL REST. if wyeast 2308 yeast not available, check for WLP820 oktoberfest/marzen. Or for simpler wyeast 2124 bohemian lager, WLP833 german bock, Wyeast 2206 Bavarian lager (i might have some of this from last year?)
for diacetyl rest, copied from virginia lager recipe :
going to do byo fast ferment approach janFeb2017. reread but start at 44-50 let fermentation go 50% then (remove the probe from the fermentor let it reach ambient temp then...?) raise temp 5 degrees every 12 hours til you get to 65-68. once you get 100% you can crank down to lager temp for 3-5 days then you done. this will take care of diacetyl rest and apparently gets the lager completely done in 2-3 weeks. |
