Notes: This is the Brooklyn Sorachi Ace Clone recipe from BYO Magizine, with no changes.

Mash in at 122F, hold 10 minutes. Raise mash temperature to 146F and hold for 60 minutes. Raise mash to 152F and hold 15 minutes. Then mash off at 168F. To 5 gallons of wort at 13.5P or 1.054, add corn sugar. Boil ends at 60 minutes. Cool to 64F, aerate well and pitch yeast. Ferment at 71F. After fermentation ends and yeast settles, dry hop with Sorachi Ace for 5-7 days.

Mash in at 150°F (66°C) for 45 minutes. Run off into the kettle and boil for only 20 minutes. Don’t use any kettle finings. At flameout, add the Citra hops and whirlpool for 5 minutes before knocking out into the fermentor. Maintain the primary fermentation temperature of 68°F (20°C) and follow the dry-hop schedule. Chill 3 days after the last dry-hop addition and bottle or keg shortly after the bulk of the sediment has settled.

BREWER’S NOTES
Make sure your grist crush isn’t too fine. The high proportion of flaked oats can give you a stuck mash, especially without a beta glucan rest, which is to be avoided to maintain body. Expect to sacrifice some extract efficiency and adjust accordingly. Ideally, you want to use water low in sulfates and at least 150ppm calcium to accentuate fullness, rather than a crisp sulfate bite, in the body and mouthfeel of the beer. The shorter boil and avoidance of finings maximize haze. For a juicy beer like this, you don’t want to drop out those protein-polyphenol complexes in suspension.

Notes: The aim in this hop regime is to try to emulate the flavours of the classic modern American APA hops, but have pulled back on the last minute additions of Citra, that I found imparted a cat pee funk when dry hopped in my Emerson's Pilsner clone. All late hops are done in bag to minimize hop residue in the brew. 1g of irish moss before end of boil. Brewed 2 Aug 2015. Yeast re-hydrated 2 hours before pitching. Yeast pitched at 18oC. Bubbling in air lock after 6 hours. Fermented in glass carboy.

End of Week 3: Taking along time to ferment out (G = 1016), probably due to the lower than anticipated fermentation temp of 12-14 dC. In week one the beer looked like it had separated: beer on top, then a layer of yeast, then more beer, then trub-like solids 1/4 way down. Raised temp to 18dC and yeast multiplied like crazy and bubbling increased. Lead to an excessive amount of gnarly looking krausen which only dropped out in week 3. Still, the beer tastes promising - slightly yeasty but clean enough and starting to clear. Will dry hop 15g Liberty for 3 days before bottling end of 4th week.

Final gravity 1016 - learned above problem possibly due to low mash temp (about 63 degrees C). Tastes fine. Est 16L. Bulk primed with 100g dextrin.
