Notes: because it has the Vienna I mashed for an hour instead of steeping, this popped the top of my carboys, had to clean the hoses twice and had a 5 inch krausen ring around the top. I let it age in the 36 range in my conditioning kegs for 7 days after a 10 day fermentation, pulled off into a serving keg and taste notes: a very roasted flavor with high alcohol back end, the hops disappeared as expected but balanced the sweetness perfect with this yeast! carbonation can be lowered to keep the bite away, nice smooth sipper on a cold winter night.
I fermented down to 12 so a 7.88 on the alcohol
This is a winner!
notes: use 90 instead of 120 or less 120 for less of a roasted flavor if needed
you will need 2 yeasts for a 5 gallon container so 4 for this batch even with a starter, I made a 2000ml starter over night and put 4 inches of foam on top of each carboy |

Notes: Slightly disaster filled first ever partial-mash brew-day. Intended to brew Sara Carter's Bombay IPA. Accidentally brewed this instead. Got lower than expected efficiency. Correctly calculated how much DME to add - but then inadvertently added 1Kg too much giving a much higher than expected OG.
This recipe was very bitter at the lower OG, so hopefully it will turn out reasonably well anyway. Even in the worst case scenario, I'm pretty sure I made beer.
90% attenuation based on what I actually got. Notty is amazin'. |

Notes: Styled after Duvel: Slightly fruity, dry aroma, well-hopped beer and with a slightly bitter aftertaste
Recipe inspired by a Duvel clone partial mash from a magazine.
Duvel website describes hops used are Saaz & Styrian Golding.
>Make a big yeast starter (3L for 5gal batch).
>Option: alternate yeast is White Labs WLP570 (Belgian Golden ale)
-->used dry trappist yeast this time
>In steeping pot, heat mash water to 72C.
>Add crushed grains in grain bag
>Steep grains at 66C for 45mins
>Prepare brewpot boiling water
>When steep over, add subset of brewpot water (~32% of original steeping volume) to the grain tea in steeping pot, then pour all through the mash grains via colander into brewpot.
>Heat brewpot to boil
>Stir in dried malt extract
>Add hops & begin 60min boil
>With 15 mins left in boil, add kettle candi sugar, hops and Irish moss, then turn off heat and stir in light dried malt extract (substituted for original liquid malt extract)
>Stir well to dissolve extract, then resume heating (keep boil clock running while you stir)
>At end of the boil, add last charge of hops, cool wort and transfer to fermenter.
>Aerate wort and pitch yeast
>Ferment at 20C
>Option:The brewers of duvel pitch at 16C and let the temperature rise to as high as 29C during primary fermentation.
>When primary fermentation is complete, rack to secondary and add dosage candi sugar dissolved in hot water held at 71C for 15 minutes.
>Bottle when beer falls clear |

Changed out 2row with DME.
Thinking of adding lactose along the way to sweeten it up a little, since there is so much dark specialty grain.
Thinking of splitting up the batch in secondary and doing 1 gal on oak, 1 gal on raspberries. Hbt thread suggests less than 3 lbs frozen per 5 gals...others say to use 1lb per gal...
Could also use vanilla bean in the base beer or separately...
After second glance im not sure where this recipe comes from. The cake idea was from the magazine but this recipe does not resemble the original recipe posted in the mag. This appears to be some combination of some RIS recipe, combined with my VBS recipe, and who knows what else....
originally had this as an extract beer but i have an extra 1 lb of 2row sitting around and plus i will need to do some level of mashing in order to incorporate the cake! |

Notes: Bring 1 gal of water to 165 deg f. Place grains and corn into cloth bag and steep at 149 deg f (temp should drop approx 20 deg when grains are placed in) for 45 min. Notes: This brew is in honor of the victims of Hurricane Irene, which wiped out a large amount of infrastructure in Vermont and took the lives and livelihoods of many fellow New Englanders. Starting with a basic American Amber recipe, the hops are tweaked to add more earthy and piney characteristics, reminiscent of the enthusiasm for outdoor exploration and hard work in Vermont. In secondary fermentation, the beer is racked onto a gallon of pure Grade B Vermont Maple Syrup; there's a possibility for the re-starting of fermentation here, which I've never experienced before, so the final alcohol will probably by higher than Brewprint calculates.
Also, $50 will be donated to the Chester Andover Family Center, an amount equivalent to the ingredients cost for 5 Gallons of this beer. Google the center and see the great work they do for the community as a food bank and supplier to the needy. |
