Kettle Sour (using an Anvil Foundry)
-Mash as noted
-Collect wort and pasteurize above 170 for 20 minutes
-Chill to 100F
-Adjust mash pH to 4.2 with lactic acid
-Add 2g of Lallemand Wildbrew Sour Pitch. Store the rest in vacuum sealed bag and store in freezer.
-Did not purge headspace with CO2 or cover with Saran Wrap
-Close lid. Did not cover seams of lid with saran wrap
-Hold temp above 95F until a pH of 3.4 is reached
-Reached a pH of 3.5 in 17.5 hours. Brought wort to a boil and proceeded as normal

Notes: the yeast being used for this will be collected Voss Kviek from the Watermelon Ale. Given the SG i will probable use 4 x 300ml jars. these will only contain approx 200ml of useable yeast due to the old beer from the collection.
I was going to use the esky mush tun again but the setup of this needs some work as i dismantled the PVC tubing from the bottom of the Tun. |

Notes: Starting with RO as Source Water.
Increased epsom salt until the magnesium target is reached, then increased calcium chloride until the chloride target is reached, followed by increasing gypsum until the sulfate target is reached.
DRY HOP: Add 2oz. Citra on Day 10 and let sit for 4 days, then start cold crash (Day 14).
This is my first batch where I am fining with gelatin. After cold crashing brought the temps to ~37F, I mixed 1/2 tsp of Knox unflavored gelatin powder into 60ml of RO water at ~150F and then pitched that into the fermenter where it sat for 3 days at ~37F before kegging. |

Notes: Recipe based on Guten 40L by Keg King (all in one).
Depending on water loss, adjust the mash/sparge ratio. The mash in this case was moderately thick but thin enough to stir and recirculate.
Water amounts will be tweaked based on brew performance.
Sparge water to meet pre-boil volume of 28L, depending on boil off temperature and efficiency, should end up with SG 1060 and approximately 24L fermenter volume. |

Notes: Brut IPA based off the dude at Morebeer. I forget his name but he's always there.
He calls for short boil (15min)
Hops at 5 min (~2oz) and flameout (8 oz)
Chill wort down to 140, add amyloglucosidase enzyme, whirlpool 30 minutes.
Dry hop with a bunch (another 8 oz?)
*no bittering hops!*
Ferment with Kveik in the 80-90F range. Should finish quickly!
I'll carbonate on the higher range, maybe 3vol.
He did mention there will be little to no head on the beer once served. Also the calculated IBU should be really low, like around 10.
I will whirlpool for 20 at 180, then drop to 140 and whirlpool with enzyme. |

BREW DAY (26-Oct-19):
Efficiency was lower than expected, possibly from the use of unmalted wheat.
Ferm 1 = Sour Batch Kidz + Cantillon dregs + LaFolie dregs
Ferm 2 = Roselare blend + Kan Fou, 2 FW barrelworks dregs
Added 10 oz cane sugar (in 8 oz water) on 28-Oct-19 to each fermenter.
UPDATE 13-MAR-20:
Blended two fermenters evenly (pH at ~3.3 and ~3.9 for Fermentern1 and 2).
1 gal straight
3 gal wine grapes
3 gal peaches
5 gal 2nd use raspberry, blueberry, blackberry and mango
Visible fermentation took 4-5 days to renew. Let go for 1-2 months before tasting/measuring.
Update, bottling 02-May-20:
Peaches (2.6 gal, added 3 oz sugar for 3.0 CO2 vol), pH at 3.55
Wine grapes (2.4 gal, 2.8 oz sugar), pH 3.52
