Notes: 06-04-2025 @1200
Place 21 l water into FV, add 1/3rd crushed camden tablet
Take out 1l of water and boil, Add
*1kg of white can sugar,
*1 kg Of Amber soft sugar. (eqautes to 2l)
stir throughly then add back to FV, volume 23l
Place a muslin bag over the top of the FV and leave over night (no need to drop pH of water as limes will acidify the water when added the following day)

slice/ zest the skins of 25unwashed unwaxed limes and place in a pasterused muslin bag, do not wash the limes, as I want to utilise the yeast on the skins
remove/ slice off any remainder of the white of the limes and discard
quarter the limes then squeeze the limess in a macerator juicer with 1cm of ginger. throw away the fibre produced (it contributes to bitterness)
Add the 1l of lime juice to the FV
Add some * ginger plant into the muslin bag , then hang the muslin bag of lime zest/ ginger plant inside the FV and secure the string to the outside of the FV with tape
DID NOT ADD YEAST NUTRIENT NOR YEAST i.e. I added yeast for my lemonade last year i.e. 1.5 tsp of yeast nutrient, 0.5 tsp yeast nutrient, 1 tsp of wine yeast (can use champagne yeast)

Should finish at 1.010 ??? (so can RACK AT above that so no need to add priming sugar, so chill, then rack, or no chill and catch it early

12-4-2025 @0900 24l. 22 cels, sg 1.010 , abv 2.6%, bottled 4l into bottle, 18l into keg, added zest/ juice of 4 unwaxed limes
13-4-2025 @1300, carbonated! Tastes good, v laid back lime flavour, perfect on a hot summers day ie refreshing
* ginger plant , I did not use yeast

Notes: The last attempt of this recipe was really good, so as usual I'll have to throw a spanner in the works and try to mix it up a bit.
Instead of wheat malt, I subbed in Triticale Malt which apparently is like a characterful wheat malt (we'll see!) and instead of doing a kettle sour, I'm trying the Phiily Sour yeast that creates lactic acid during fermentation.
Mashing low to try and get more glucose in the wort to make the Philly Sour produce more sourness.
I'm also trying to see if a 30 min mash and boil still makes a good beer.
Update: It was way too sour at the low mash temp (64) so I put two small cans (400g each) of tinned apricots and a small tin of apricot nectar after the cold crash and let it sit for a day or two before racking into the keg. I don't normally like sweet beers but it turned out really good. |

A bit more than 1/2 pot of water @70C resulted in 63,7C Mash.
Mash 60 Minutes
Masout 15 Minutes, rest of the water boiling resulted in 76C Mashout.
Added 1,75l water afterwards to get the pot full.
Wort tasted very bitter, maybe too bitter. |
