Chill to 40 deg C, lactic acid to ph 4,5, pitch Sour Pitch and leave it to desired Ph.
Boil 60 min, add yeast nutrient (15min) and chill to 20 deg C.

Dry hop last 6-7 days, including 2 days cold crash.
