Silver in British Bitter (8 entries)
It got 38 and 40 out of 50.
Good comments, one noted a hint of Diacetyl, which was definitely there (1968), though it mellowed considerably with bottle conditioning. One of the judges also said that the aroma could pop more. Otherwise they seemed to have liked it and I thought it was excellent as well.

Start Fermentation at low end (18deg) and ramp up over a few days. After fermented, leave for another week or so to clean out fully.
100g Quality Cocoa Nibs, soaked in Vodka for 1 week minimum. After fermentation complete, crash to 0Deg and add nibs and vodka, leave at 0deg for 2 weeks.

Notes: Friday nite brew, first Rye beer. long soak at 130F, then 1 hour @ 148. After using Kettle for Sous vide, I noticed temp very stabel throughout, with no need for pump.
Used no sparge for Mash, lifted bag every 15 min to circulate. Added Sugar, and DME Very Long boil 2.5 hrs, Continuing the no pump method, roughly filled fermenter, cooled overnight, then poured bucket to bucket adding yeast. |
