Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gallon recipe, you will need extra because of the fluid loss during the boil process
1lb American Two Row
1lb Caramel 10
.5lb Carahell
.5lb Cara Pils/Dextrine
5lbs Golden Dry Malt Light Extract
2oz Northern Brewer Hops
1oz Simcoe Hops
2oz Horizon Hops
1 Safale US-05 Yeast
Procedure:
Start with 2.5 gal tap water, heat to 165 degrees and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 5lbs Golden Malt Extract and return wort to boil
Add 2oz Northern Brewer hops and boil for 60 minutes
Add 1oz Simcoe hops and boil for 30 minutes
Add 1oz Horizon hops and boil for 10 minutes
Add 1oz Horizonhops at flame out and whirlpool for 2 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.057
Add Safale US-05 yeast
Fermentation:
Primary – 2 weeks
Secondary – 2 weeks
Keg beer after 4 weeks, set CO2 to 20psi and refrigerate for three days. After 3 days set CO2 to 5-7psi and enjoy!

Notes: After primary fermentation is complete, add blueberries to sanitized muslin bags and either carefully place in primary (if you have a bucket or large mouth carboy), or if using secondary, place in secondary and rack beer on top. Allow secondary fermentation for about another week, just keep an eye on hydrometer readings. A lot of differing opinions on fruit additions. I have never had an issue or a bad batch using this method and I prefer the fresher flavor it imparts vs boiling the fruit. |

Notes: this is untitled / grand theft otto / nationale batch #5 - have not brewed it since april 2016.
this time im adjusting the efficiency to my new system, and just brought down the 2row but left the other grains the same. used to be citra at 15 minutes, replacing that with centennial. bringing the IBU down kind of a lot, down to 36. untitled 3 was 45. BU/GU is 80, slightly higher than UT3's 76. Keeping OG and ABV at 6% for now.
wanted to experiment with some other specialty malts but my notes indicate this version was pretty good last time, so we will try to make it similarly and see how it comes out on the new system before making any changes.
may look into treating the water...
this should use whirlfloc and i probably will cold crash it for at least couple days to try to clear it up a lot and get a nice clean taste.
other things to try : sugar to dry it up, mix in some centennial, try using vienna or munich or some other base malt. a little biscuit malt might be what youre looking for. first wort hopping (how does this not just turn into a long boiled bitter addition? just because it is removed during sparge and the hop particles are not actually boiled themselves?), WY american all ii, lowering IBU down even more to 30-35 (plus add more late addition hops?) |
