Beer Profile Estimated Original Gravity: 1.066 SG

Mashed at 153 as wanted slightly higher attenuation. Sparged with 1 gallon of 168 water.
Pre boil gravity was 1060. Post boil 1066. Chilled to 65 degrees with new Jaded. Pitched 2 packs of dry yeast straight onto wort.
12 hours later fermentation was active and gravity was 1058. Kept chilled at 65. After 48 hours gravity was 1016. After 72 hours gravity was 1009. Added 3 oz of hops in a bag.
After 5 days of dry hop put into keg - 8 days total fermentation. FG 1011 with hydrometer.
Drank after 10 days on CO2 In kegerator. Thick creamy head that lasts a while. Hazy golden orange color. Citrus nose. Palate is yuzu, notes of guava, and a firm underlying bitterness. |

Target water as recipe: WATER =2 g/gal gypsum added to reverse osmosis (RO) water.
Directions:
Mash at 155°F (68°C) for 1 hour. Pitch yeast at 62°F (17°C) and allow to rise to 67°F (19°C) over 7 days. Ferment at 67°F (19°C) to terminal gravity. Crash to 42°F (6°C) and hold 10-14 days.
directions called for 7 day dry hop. I will try 48 hours at 68 degrees at the end of fermentation.
Brewed on 1/8/2022 - no sparge, no circulate.
This grain / water amount is the tippity top of what my system can handle in the grain pipe bag.
Misplaced recirc pump piece so I stirred and mashed 2 hours but no recirc during mash.
Efficiency was estimated at 63 percent for recipe but the actual OG was 56 percent.
Preboil amount was 7 gallons. into fermenter exactly at 5.5 gallons as recipe indicated.
dry hopped 1/15-1/18 at 66-68 degrees. (3 days)
kegged 1/18/2022.
