Notes: Freeze raspberries in a ziplock bag. Take out periodically during primary, thaw, crush inside the bag, re-freeze (2-3 times). This breaks down the cell walls of the raspberries and dramatically cuts down the time required in the fermenter.
Add barrel chunks to primary before adding wort. They've had whisky in them. They don't need sanitising.
Ferment at 10°C. You can pitch several degrees higher than this provided you're certain it will reach 10°C in the next 24 hours; esters are not produced until fermentation beings. The dangers of high temp pitching are an old wives' tale.
Once fermentation starts, rise up to 15°C over 10 days (0.5°C per day). Hold for a week.
Thaw and add raspberries directly to primary. By now raspberries should be more like a paste than whole fruit. Allow to rise to 21°C but no higher. Ferment raspberries for 7-10 days.
Cold crash to 2°C for 2 days. Bottle for at least three weeks. before cold conditioning. |

Notes: The 1 Lb Marris Otter Pale used was - Muntons Morris Otter.
Minor adjustment in original recipe - original said to use 11 lbs. 2- row pale malt, I used 10 lbs. and then added 1 lb of Muntons Morris Otter to achieve a total of 11 lbs 2-row pale malt.
On day 5 of fermentation, add the dry hops addition. Bottle or keg after 3 days on dry hops.
Salts and acid used in mash and sparge water to control PH level - based on my water chemistry.
Added .25 tsp yeast nutrient at 65 min boil time.
note - last time I brewed this recipe as per original recipe in BYO Mag, I bottle conditioned to 2.5 vols. but carbonation fell way short - ensure you get some of the yeast cake in bottling bucket or add some bottling yeast to ensure carbonation. |

Notes: Unmalted wheat is IGA homebrand plain white flour.
Boiled flour in 1L water to gelatinise starches, then added rest of strike water and brought to 45C.
Brew in a bag on stove. Mash In 3L/kg.
10L mash liquor, drained then sparged with 4L 80C water

Diluted with 1L water to 1.070 before pitching. Final volume 10.5L.
